Ingredients
Scale
For the Crust
- 2 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 cup chilled plant-based butter, cut into small pieces
- 4–6 tablespoons ice-cold water
For the Filling
- 6–7 fresh apples (such as Granny Smith), peeled, cored, and sliced
- 1 tablespoon lemon juice
- 3/4 cup brown sugar
- 1 teaspoon cinnamon (natural)
- 1/4 teaspoon nutmeg (natural)
- 1 teaspoon vanilla extract (natural)
- 1 tablespoon apple cider vinegar
- 1–2 teaspoons natural gelling agent
- 1/4 teaspoon salt
Instructions
- Prepare the Crust: In a large bowl, combine the all-purpose flour and salt. Cut in the chilled plant-based butter until the mixture resembles coarse crumbs. Gradually add ice-cold water, stirring gently until the dough just comes together. Wrap the dough in plastic wrap and chill for at least 30 minutes to ensure a flaky crust.
- Prepare the Filling: Peel, core, and slice the fresh apples. Toss the apple slices with lemon juice, brown sugar, cinnamon, nutmeg, vanilla extract (natural), apple cider vinegar, natural gelling agent, and salt. Let the mixture sit while you roll out the dough to enhance flavors and thicken the filling slightly.
- Assemble the Pie: Roll out half of the chilled dough into a circle and carefully place it into your pie dish. Pour the prepared apple filling evenly into the crust. Roll out the remaining dough for the top crust; you may cover it fully or create decorative patterns with cutouts. Seal the edges well and cut small vents in the top crust to allow steam to escape during baking.
- Bake to Perfection: Preheat the oven to 375°F (190°C). Bake the pie for 50-60 minutes or until the crust is golden brown and the filling is bubbling. If the edges brown too quickly, cover them with foil halfway through baking to prevent burning.
- Cool and Serve: Remove the pie from the oven and let it cool for at least two hours to allow the filling to set properly. Serve warm or at room temperature for the best flavor and texture.
Notes
- Choose a mix of tart and sweet apples for balanced flavor and texture.
- Keep dough ingredients cold for a flakier crust.
- Handle the dough gently to avoid toughness.
- Cut vents in the top crust to help steam escape and prevent sogginess.
- Allow the pie to cool fully before slicing for clean cuts.
