Description

These Banana Oatmeal Bars are a wholesome and delicious snack made with ripe bananas, old-fashioned oats, natural sweeteners, and plant-based ingredients. Perfect for breakfast, lunchboxes, or a guilt-free treat, they combine simple pantry staples to create a naturally sweet, chewy, and nutritious bar that everyone can enjoy.

Ingredients

Scale

Wet Ingredients

  • 3 ripe bananas (mashed)
  • 1/2 cup natural nut butter
  • 1/4 cup maple syrup (natural)
  • 1 teaspoon vanilla extract (natural)

Dry Ingredients

  • 2 cups old-fashioned oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup chopped nuts or seeds
  • 1 tablespoon natural gelling agent

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C). Line a baking dish with parchment paper to prevent sticking and for easy cleanup.
  2. Mash the Bananas: In a large bowl, mash the ripe bananas until smooth but still slightly chunky to retain texture.
  3. Mix Wet Ingredients: Add the natural nut butter, maple syrup (natural), and vanilla extract (natural) to the mashed bananas. Stir together until creamy and well combined.
  4. Combine Dry Ingredients: In a separate bowl, mix the oats, baking powder, ground cinnamon, chopped nuts or seeds, and natural gelling agent to ensure even distribution.
  5. Bring It All Together: Gradually fold the dry ingredients into the wet mixture until a thick, even batter forms.
  6. Bake and Cool: Transfer the batter into the prepared baking dish, pressing it down evenly. Bake for 25-30 minutes until the top is golden and set. Let the bars cool completely before slicing.

Notes

  • Use very ripe bananas with plenty of brown spots for best natural sweetness and moisture.
  • Stir just until combined to keep bars tender and avoid density.
  • Press batter firmly into the pan to help bars hold together well.
  • Check doneness with a toothpick; it should come out mostly clean with a few moist crumbs.
  • Allow bars to cool completely before cutting to prevent crumbling.
