Ideal for busy weeknights or meal prepping, it offers a versatile and satisfying way to enjoy flavorful meals anytime.

Ingredients

Scale

Meat

  • 2.5 to 3 pounds beef cheek or chuck roast

Marinade and Seasonings

  • 3 dried chipotle peppers
  • 4 garlic cloves
  • 1 medium onion
  • 1/4 cup apple cider vinegar (natural)
  • 2 tablespoons vegetarian Worcestershire sauce (natural)
  • 1 teaspoon cumin powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Cooking Liquids and Additions

  • 1 cup beef broth
  • 2 bay leaves
  • 2 tablespoons olive oil

Instructions

  1. Prepare the Peppers and Marinade: Soak the dried chipotle peppers in hot water until softened, about 15 minutes. Then, blend the softened peppers together with garlic, onion, apple cider vinegar (natural), vegetarian Worcestershire sauce (natural), cumin, oregano, salt, and pepper until smooth to create a smoky, flavorful marinade.
  2. Sear the Meat: Heat olive oil in a heavy pan over medium-high heat. Sear the beef cheek or chuck roast on all sides until deeply browned, locking in juices and adding caramelized depth.
  3. Combine and Cook: Transfer the seared meat to a pot or slow cooker. Pour the prepared marinade over the meat, add beef broth and bay leaves. Cover and cook slowly for 4 to 6 hours (or until the meat is tender and easily shredded) using low oven heat (~275°F) or slow cooker on low.
  4. Shred and Simmer: Remove the meat and let it rest briefly. Shred the meat with forks and return it to the cooking liquid. Stir well and simmer for an additional 15-20 minutes to deepen flavors and allow spices to meld.
  5. Serve and Enjoy: Serve your Barbacoa in tacos, bowls, sandwiches, or salads, garnished with fresh cilantro, diced onions, lime wedges, or slices of avocado (plant-based).

Notes

  • Choose beef cheek or chuck roast for the best tender texture.
  • Do not skip searing; it adds essential flavor layers.
  • Blend the marinade smoothly so every bite is rich and even.
  • Use freshly ground cumin and oregano for more intense aromas.
  • Cook low and slow for melt-in-your-mouth tenderness.
  • Let the meat rest before shredding to retain juices and ease shredding.
