Description

Blueberry Swirl Yogurt Bites combine creamy plant-based yogurt with fresh blueberry flavor and a natural gelling agent to create a tasty, refreshing, and portable snack. Easy to make and customizable, these visually appealing bites are perfect for a healthy treat or to impress guests with a light and colorful option.

Ingredients

Scale

Blueberry Swirl

  • 1 cup fresh or frozen blueberries
  • 1 tablespoon maple syrup (natural)
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon natural gelling agent

Yogurt Base

  • 1 cup plant-based yogurt
  • 1/4 teaspoon natural gelling agent
  • 1 teaspoon maple syrup (natural)

Instructions

  1. Prepare the Blueberry Swirl: Gently cook the blueberries with maple syrup (natural) and fresh lemon juice in a small saucepan over low heat until the berries soften and release their juices. Remove from heat and allow to cool. Stir in the natural gelling agent to help set the mixture later.
  2. Mix the Yogurt Base: In a bowl, combine the plant-based yogurt with a pinch of natural gelling agent. Stir thoroughly to dissolve the gelling agent evenly. Add maple syrup (natural) for a subtle sweetness and mix well.
  3. Layer the Swirl: Pour a small amount of the yogurt base into silicone molds or an ice cube tray. Spoon a small amount of the blueberry mixture on top. Use a toothpick or skewer to gently swirl the two mixtures together, creating a beautiful blueberry swirl effect.
  4. Chill and Set: Place the molds in the refrigerator for several hours or until the bites are firm and set. Once ready, remove them from the molds and enjoy immediately or store for later.

Notes

  • Use silicone molds to easily remove the bites and maintain their shape.
  • Cook the blueberry mixture gently to preserve vibrant color and flavor.
  • Swirl mixtures just enough to create a pretty pattern without fully blending colors.
  • Adjust natural gelling agent amount to control bite firmness as desired.
  • Chill thoroughly to ensure proper setting for the best texture.
