Ingredients

Scale

Vegetables

  • 2 cups fresh bok choy, chopped into bite-sized pieces (separate stalks and leafy greens)
  • 2 garlic cloves, minced
  • 1 tablespoon fresh ginger, minced
  • 1 medium carrot, sliced into thin strips
  • 1 bell pepper, sliced into thin strips
  • 2 green onions, chopped

Sauce & Seasonings

  • 2 tablespoons soy sauce (natural)
  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • 1 teaspoon apple cider vinegar (natural)
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch (natural thickener)
  • 2 tablespoons water

Instructions

  1. Prep Your Ingredients: Thoroughly wash the bok choy and chop into bite-sized pieces, separating stalks and leafy greens. Mince garlic and ginger finely. Slice carrots and bell peppers into thin strips for quick cooking and vibrant color.
  2. Heat the Oil and Aromatics: Warm sesame oil in a large skillet or wok over medium-high heat. Add minced garlic and ginger, stirring constantly until fragrant and golden but not burnt, about 30 seconds to 1 minute.
  3. Cook the Veggies: Add carrot and bell pepper strips first as they need a little more time to soften. Stir-fry for 3-4 minutes until slightly tender but still crisp.
  4. Add Bok Choy and Sauce: Toss in bok choy stalks followed by leafy greens one minute later. In a small bowl, combine soy sauce (natural), vegetarian Worcestershire sauce (natural), apple cider vinegar (natural), cornstarch, and water to create a smooth sauce. Pour this over the vegetables and stir well to coat. Cook until bok choy is just tender and sauce thickens, about 2-3 minutes.
  5. Finish and Garnish: Remove from heat and stir in chopped green onions for freshness. Serve immediately to enjoy the vibrant texture and flavors at their peak.

Notes

  • Prep ahead by chopping vegetables and measuring sauces before cooking to ensure smooth preparation.
  • Use high heat for a quick stir-fry that keeps vegetables crisp and vibrant.
  • Avoid overcrowding the pan to prevent steaming; stir-fry in batches if needed.
  • Taste as you cook and adjust seasoning with soy sauce (natural) or apple cider vinegar (natural) to achieve the desired balance.
  • Use fresh, firm bok choy with crisp leaves for the best texture and flavor.
