Ingredients
Scale
Phyllo Cups
- 3–4 sheets phyllo dough sheets
- Olive oil, for brushing
Filling
- Plant-based Brie cheese, soft
- Fresh blackberries
- Fresh thyme leaves
- Natural gelling agent, a pinch
- Lemon zest (natural flavoring), from 1 lemon
- Maple syrup (natural), 1-2 tablespoons
Instructions
- Prepare the Phyllo Cups: Preheat the oven to 350°F (175°C). Carefully layer 3-4 sheets of phyllo dough, brushing each sheet lightly with olive oil to ensure crisp and golden layers. Gently press the stacked sheets into a mini muffin tin to form cup shapes. Bake for about 10 minutes until the cups are golden brown and crisp. Remove and allow to cool slightly.
- Create the Blackberry Thyme Mixture: In a small saucepan, combine fresh blackberries, a pinch of natural gelling agent, maple syrup (natural), lemon zest (natural flavoring), and fresh thyme leaves. Heat gently over low heat, stirring occasionally, until the blackberries release their juices and the mixture thickens slightly while keeping the berry shapes intact. Remove from heat and keep warm.
- Assemble the Cups: Once the phyllo cups have cooled slightly, place a small spoonful of soft plant-based Brie cheese at the bottom of each cup. Top with a spoonful of the warm blackberry and thyme mixture, ensuring a balanced combination of creamy, fruity, and herbal flavors in every bite.
- Final Touch: Optionally garnish each cup with a few fresh thyme leaves or drizzle lightly with olive oil for a glossy finish. Serve immediately or at room temperature to preserve the phyllo’s crispness.
Notes
- Keep phyllo dough covered with a damp towel during preparation to prevent drying and cracking.
- Brush olive oil evenly on each phyllo sheet for consistent crisping and to avoid sogginess.
- Allow phyllo cups to cool slightly before adding Brie to prevent premature melting.
- Use just enough natural gelling agent to slightly thicken the blackberry mixture without creating a jam-like consistency.
- Always use fresh thyme and blackberries for optimal aroma and flavor.
