Ingredients

Scale

Dough Ingredients

  • 3 1/2 cups all-purpose flour
  • 2 1/4 teaspoons active dry yeast
  • 1 cup plant-based milk, warmed to about 110°F
  • 1 tablespoon apple cider vinegar (natural)
  • 1/4 cup brown sugar (natural)
  • 1/2 teaspoon sea salt
  • 1/4 cup plant-based butter, softened

Filling Ingredients

  • 1 cup chopped pecans, toasted
  • 1/3 cup brown sugar (natural)
  • 2 teaspoons cinnamon (natural)
  • 1/4 cup plant-based butter, softened

Glaze Ingredients

  • 1/4 cup maple syrup (natural)
  • 1 tablespoon plant-based butter
  • 1/4 teaspoon natural gelling agent

Instructions

  1. Prepare the Dough: Warm the plant-based milk to about 110°F and stir in the apple cider vinegar (natural) and active dry yeast. Let it activate for about 5 minutes until frothy. In a large bowl, combine the all-purpose flour, brown sugar (natural), and sea salt. Add softened plant-based butter and the yeast mixture, then knead until smooth and elastic, about 8-10 minutes. Cover the dough and let it rise for 1 to 1.5 hours until doubled in size.
  2. Toast Pecans and Prepare Filling: Lightly toast the chopped pecans in a skillet over medium heat until fragrant. In a small bowl, mix the brown sugar (natural), cinnamon (natural), and softened plant-based butter until combined to form the filling.
  3. Roll and Fill the Dough: Once the dough has doubled in size, roll it out on a floured surface into a large rectangle. Spread the cinnamon butter mixture evenly over the dough, then sprinkle the toasted pecans fully layered on top. Roll the dough tightly from the long edge, then slice into 12 equal buns.
  4. Second Rise: Place the buns into a greased baking dish, spaced slightly apart. Cover and allow them to rise for another 30 to 40 minutes until puffy.
  5. Bake to Perfection: Bake the buns in a preheated oven at 350°F for 25 to 30 minutes or until golden brown and cooked through. Let the buns cool slightly before applying glaze.
  6. Prepare and Apply Glaze: Gently heat maple syrup (natural), plant-based butter, and natural gelling agent together until smooth. Drizzle generously over the warm cinnamon buns. Serve fresh and enjoy.

Notes

  • Ensure plant-based milk is warm but not hot to activate yeast effectively.
  • Toasting pecans releases essential oils that enhance flavor.
  • Roll dough evenly for consistent baking and filling distribution.
  • Allow buns to rise twice for soft, fluffy texture.
  • Apply glaze while buns are warm for a glossy finish.
