Ingredients
Scale
Chicken Marinade
- 1 lb chicken thighs, boneless and skinless
- 1/2 cup Greek-style plant-based yogurt (natural)
- 2 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp paprika
- 1 tbsp vegetarian Worcestershire sauce
- 1 tbsp lemon juice
- Salt, to taste
Cooked Meats
- 4 slices smoked turkey bacon
Fresh Vegetables
- 1/2 cup cucumber, sliced
- 1/2 cup tomatoes, sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
Wraps and Sauces
- 4 whole wheat pita breads or wraps
- 1/4 cup plant-based tahini sauce (natural)
- 1 tsp lemon juice (for thinning tahini sauce)
- 1–2 tbsp water (for thinning tahini sauce)
Instructions
- Prepare the Chicken Marinade: In a mixing bowl, combine Greek-style plant-based yogurt (natural), minced garlic, ground cumin, paprika, vegetarian Worcestershire sauce, lemon juice, and salt. Whisk together until smooth and vibrant. Add the chicken thighs and toss to coat evenly. Cover and refrigerate for at least 1 hour or up to overnight to deepen flavors.
- Cook the Chicken and Smoked Turkey Bacon: Heat a skillet over medium-high heat and add a splash of olive oil. Place marinated chicken thighs in the skillet and cook, turning occasionally, until golden brown and cooked through, about 6-8 minutes per side. In a separate pan, cook smoked turkey bacon until crisp. Drain excess fat on paper towels and set aside.
- Prepare Fresh Veggies and Sauces: While chicken cooks, slice cucumbers, tomatoes, and red onion. Chop fresh parsley. In a small bowl, mix plant-based tahini sauce (natural) with lemon juice and water to thin it slightly. Stir until smooth and well combined.
- Assemble the Wraps: Warm whole wheat pita breads or wraps lightly in a pan or microwave until pliable. Lay slices of cooked chicken and smoked turkey bacon on each wrap. Add fresh cucumber, tomato, red onion, and sprinkle with chopped parsley. Drizzle generously with tahini sauce. Roll tightly and slice in half if desired.
Notes
- Marinate chicken overnight for the best flavor infusion.
- Use chicken thigh meat to keep the filling juicy and tender.
- Slice the cooked chicken thinly for easier rolling and even flavor distribution.
- Warm wraps just before serving to keep them soft and flexible.
- Add a splash of fresh lemon juice to the assembled wraps for added brightness.
