Ingredients
Scale
Protein
- 2 chicken breasts, thinly sliced
Sauce
- 1/3 cup natural teriyaki sauce
- 1 tablespoon apple cider vinegar (natural)
- 1 teaspoon natural sweetener
- 1 teaspoon natural sesame oil
Noodles
- 200g noodles of choice (rice noodles, egg-free noodles, or whole wheat noodles)
Vegetables
- 1 red bell pepper, sliced
- 1 carrot, julienned
- 1 cup snap peas
Aromatics & Oils
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 2 tablespoons natural sesame oil
Garnishes
- 2 green onions, freshly sliced
- Optional: toasted sesame seeds (natural), fresh cilantro leaves
Instructions
- Prepare Your Ingredients: Thinly slice the chicken breasts and chop the bell pepper, carrot, and snap peas into bite-sized pieces. Mince the garlic and ginger to have all aromatics ready.
- Cook the Noodles: Bring a pot of salted water to a boil. Cook the noodles according to package instructions until just tender. Drain and rinse under cool water to stop cooking and prevent sticking.
- Sauté the Chicken: Heat 2 tablespoons of natural sesame oil in a large pan or wok over medium-high heat. Add the sliced chicken and cook, stirring occasionally, until browned and cooked through. Remove the chicken and set aside.
- Cook the Vegetables and Aromatics: In the same pan, add more sesame oil if needed. Add the minced garlic and ginger and sauté for about 30 seconds until fragrant. Add bell peppers, carrots, and snap peas, stir-fry until vegetables are crisp-tender.
- Combine and Sauce It Up: Return the cooked chicken to the pan with the vegetables. Pour the natural teriyaki sauce mixed with apple cider vinegar and natural sweetener over everything. Stir to coat well. Add the noodles and gently toss to combine, allowing the sauce to cling evenly.
- Garnish and Finish: Remove from heat. Sprinkle freshly sliced green onions, toasted sesame seeds, or fresh cilantro on top. Serve immediately and enjoy.
Notes
- Slice chicken thinly to ensure quick cooking and tenderness.
- Do not overcook noodles; they will continue to soften when combined with sauce and chicken.
- Use fresh garlic and ginger for authentic flavor.
- Keep vegetables crisp by stir-frying them last.
- Make your own natural teriyaki sauce by mixing soy sauce (natural), apple cider vinegar (natural), natural sweetener, and a touch of natural sesame oil.
