Description

This Churro Cheesecake combines creamy, smooth plant-based cheese filling with a crunchy cinnamon sugar crust that captures the nostalgic flavors of classic churros. Perfectly balanced with warm spices, natural sweeteners, and a hint of vanilla, this easy-to-make dessert is customizable and ideal for any occasion.

Ingredients

Scale

Crust

  • 1 1/2 cups graham crackers or digestive biscuits, crushed finely
  • 1/4 cup coconut oil or plant-based butter, melted
  • 1/4 cup sugar
  • 1 tablespoon cinnamon

Filling

  • 2 cups plant-based cheese
  • 1/2 cup natural sweetener (maple syrup or agave)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon vanilla extract (natural)
  • 1 tablespoon natural gelling agent
  • 1 tablespoon sugar
  • 1 teaspoon cinnamon

Optional Garnishes

  • Cinnamon sugar mixture, for sprinkling
  • Plant-based caramel sauce
  • Crushed nuts (pecans or almonds)
  • Plant-based dark chocolate, melted for drizzle
  • Fresh berries

Instructions

  1. Prepare the Crust: Crush the cookies or biscuits finely using a rolling pin or food processor. Mix the crushed crumbs with melted coconut oil or plant-based butter and the cinnamon sugar blend until well combined. Press this mixture firmly into the base of a springform pan to create an even layer. Place in the refrigerator to chill while preparing the filling.
  2. Make the Filling: In a blender or mixing bowl, combine the plant-based cheese, natural sweetener, apple cider vinegar, vanilla extract (natural), natural gelling agent, sugar, and cinnamon. Blend thoroughly until the mixture is completely smooth and creamy, ensuring the perfect cheesecake texture.
  3. Assemble and Chill: Pour the smooth filling over the chilled crust, spreading it evenly. Refrigerate the cheesecake for at least 4 hours or preferably overnight to allow it to set firmly and develop full flavor.
  4. Optional Garnish: Before serving, sprinkle extra cinnamon sugar on top or drizzle melted plant-based caramel sauce or dark chocolate. You may also add crushed nuts or fresh berries for added texture and flavor.

Notes

  • Press the crust firmly to prevent crumbling while slicing and serving.
  • Use room temperature ingredients for a smooth, lump-free filling.
  • Allow sufficient chilling time to ensure the cheesecake holds its shape.
  • Use fresh, high-quality cinnamon for an authentic churro flavor.
  • Wipe the sides of the springform pan after pouring the filling for easy removal and clean presentation.
