Cowboy Butter Sauce (natural)

  • 3 tbsp plant-based butter-like spread
  • 2 cloves garlic, minced
  • 1 tbsp vegetarian Worcestershire sauce (natural)
  • 1/4 cup grape juice
  • 1 tsp natural gelling agent
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Prepare the Steak Bites: Trim and cut the steak into bite-sized pieces. Season generously with salt and pepper. Heat a skillet over medium-high heat and sear the steak bites until browned on all sides but still juicy inside. Remove from the skillet and set aside.
  2. Cook the Tortellini: Boil the plant-based cheese tortellini according to package directions until al dente. Drain and keep warm.
  3. Crisp the Smoked Turkey Bacon: In the same skillet, cook the smoked turkey bacon until crisp. Let cool slightly, then chop into smaller pieces.
  4. Make the Cowboy Butter Sauce (natural): Reduce the heat to medium and add plant-based butter-like spread, minced garlic, and vegetarian Worcestershire sauce to the skillet. Stir in grape juice and gradually sprinkle the natural gelling agent while stirring. Continue until the sauce thickens to a consistency that coats the back of a spoon.
