Ready in under 30 minutes, this comforting dish combines succulent shrimp, aromatic garlic, and a velvety sauce for a satisfying weeknight dinner that is easy to customize for your dietary preferences.

Ingredients

Scale

Shrimp and Garlic

  • 1 lb peeled, deveined shrimp
  • 4 garlic cloves, minced
  • 2 tbsp olive oil

Sauce

  • 1 cup plant-based cream
  • 1 tbsp apple cider vinegar (natural)
  • 1 tbsp vegetarian Worcestershire sauce (natural)
  • 1/4 tsp natural gelling agent
  • Salt and pepper, to taste

Others

  • 8 oz pasta (fettuccine or linguine recommended, gluten-free if preferred)
  • 2 tbsp plant-based parmesan, grated
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Prepare Pasta: Boil your choice of pasta in salted water until al dente according to package instructions. Reserve about 1/2 cup of pasta water before draining to help loosen the sauce if needed.
  2. Sauté Shrimp and Garlic: Heat olive oil in a large skillet over medium heat. Add minced garlic and cook until fragrant but not browned. Add shrimp and sauté for 2-3 minutes per side until pink and opaque. Remove shrimp and set aside.
  3. Create the Creamy Sauce: In the same skillet, add plant-based cream, apple cider vinegar (natural), and vegetarian Worcestershire sauce (natural). Stir in salt, pepper, and natural gelling agent. Let the sauce simmer gently to thicken and meld flavors.
  4. Combine Pasta and Shrimp: Return cooked shrimp to the sauce. Add drained pasta and toss together over low heat. Use reserved pasta water as needed to achieve the perfect creamy consistency.
  5. Finish and Serve: Sprinkle grated plant-based parmesan and fresh chopped parsley on top. Serve warm and enjoy.

Notes

  • Avoid overcooking shrimp to keep them juicy and tender.
  • Use fresh garlic cloves for best aromatic flavor.
  • Reserved pasta water helps loosen and bind the sauce.
  • Keep sauce at a gentle simmer to prevent separation.
  • Add fresh herbs last to retain their color and flavor.
