Scale
Proteins
- 2–3 chicken breasts, rinsed and dried
- 4 slices smoked turkey bacon, cut into small pieces
Vegetables
- 2 medium carrots, diced
- 2 celery stalks, diced
- 1 yellow onion, diced
- 2 garlic cloves, minced
- 2 tablespoons fresh parsley, chopped (plus extra for garnish)
Liquids and Sauces
- 6 cups low-sodium chicken broth
- 1 tablespoon vegetarian Worcestershire sauce (natural)
- 1 tablespoon apple cider vinegar (natural)
Carbohydrates
- 2 cups egg noodles
Seasonings and Others
- 1 pinch ground black pepper
- 1 teaspoon natural gelling agent (mixed with cold water)
Instructions
- Prepare the Ingredients: Dice the carrots, celery, and onions. Mince the garlic cloves and cut the smoked turkey bacon into small pieces. Rinse and dry the chicken breasts to prepare them for the crockpot.
- Layer the Ingredients: Place the chicken breasts at the bottom of the crockpot. Add the diced carrots, celery, and onions on top. Pour in the low-sodium chicken broth, then add the smoked turkey bacon pieces, minced garlic, vegetarian Worcestershire sauce (natural), apple cider vinegar (natural), and a pinch of ground black pepper. Stir gently to combine all ingredients.
- Cook Low and Slow: Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and the vegetables are fully cooked.
- Add Noodles and Natural Gelling Agent: About 30 minutes before serving, shred the cooked chicken breasts using two forks and stir the shredded chicken back into the soup. Add the egg noodles and mix in the natural gelling agent dissolved in a small amount of cold water to gently thicken the broth. Continue cooking uncovered until noodles become tender.
- Final Touches: Stir in chopped fresh parsley, taste and adjust seasoning with additional ground black pepper if needed. Serve immediately while warm and cozy.
Notes
- Use low-sodium broth to control the salt level and customize flavor to your liking.
- Add noodles near the end of cooking to avoid them becoming mushy.
- Shred chicken carefully after cooking to maintain tenderness and even distribution.
- Stir gently to keep noodles and vegetables intact for a beautiful presentation.
- Prep ingredients the night before to save time on busy days.
