Ingredients

Scale

Chicken and Coating

  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1/2 cup cornstarch
  • Vegetable oil for frying

Sauce

  • 1/2 cup grape juice (natural)
  • 2 tbsp vegetarian Worcestershire sauce (natural)
  • 3 tbsp soy sauce (natural)
  • 1 tbsp rice vinegar
  • 2 tbsp brown sugar (natural)
  • 2 cloves garlic, freshly minced
  • 1 tbsp fresh ginger, freshly minced
  • 1/4 tsp red pepper flakes (adjust to taste)
  • 1 tsp natural gelling agent
  • 1 tsp sesame oil (natural)

Garnish

  • 2 green onions, chopped

Instructions

  1. Prepare the Chicken: Cut the chicken thighs into bite-sized pieces and gently toss them in cornstarch until lightly and evenly coated. This coating will ensure a crispy texture once fried.
  2. Make the Sauce: In a bowl, whisk together grape juice, vegetarian Worcestershire sauce, soy sauce, rice vinegar, brown sugar, minced garlic, minced ginger, red pepper flakes, and the natural gelling agent. This mixture will become a glossy, flavorful glaze when heated.
  3. Fry the Chicken: Heat vegetable oil in a skillet or wok until shimmering. Fry the coated chicken pieces in batches, frying each side until golden and crispy. Transfer cooked pieces to paper towels to drain excess oil.
  4. Combine Chicken and Sauce: Drain most of the frying oil from the pan, leaving a small amount. Pour in the prepared sauce and bring it to a gentle boil. Allow the sauce to thicken thanks to the natural gelling agent. Return the fried chicken to the pan and stir until each piece is fully coated in the luscious sauce.
  5. Finish and Garnish: Drizzle sesame oil over the sauced chicken for a nutty aroma. Sprinkle chopped green onions on top and serve immediately to enjoy the vibrant flavors and crispy texture.

Notes

  • Pat chicken dry before coating to achieve maximum crispiness.
  • Fry in small batches to prevent overcrowding and keep oil temperature steady.
  • Use fresh ginger and garlic for the best aromatic flavor.
  • Add the natural gelling agent slowly to adjust sauce thickness to your preference.
  • Serve immediately for optimal texture and flavor.
