Instructions

 - Grill the Veggies: While the gnocchi is grilling, slice the bell peppers and zucchini. Toss with olive oil, garlic powder, salt, and pepper. Grill the veggies until tender and well-marked, about 3 to 5 minutes per side. Set aside to cool slightly.
 - Assemble the Salad: In a large mixing bowl, combine the grilled gnocchi, grilled veggies, and halved cherry tomatoes. Add shredded mozzarella cheese (vegetal) and fresh basil leaves. Drizzle with apple cider vinegar and more olive oil, then gently toss to coat everything evenly with the dressing.
