Ingredients

Scale

Filling Ingredients

  • 4 oz smoked turkey bacon, diced
  • 1 cup chicken breast, cubed
  • 1/2 cup carrots, diced
  • 1/2 cup peas
  • 1/2 cup yellow onions, diced
  • 1 tbsp vegetarian Worcestershire sauce (natural)
  • 1 tsp apple cider vinegar (natural)
  • 1 tbsp all-purpose flour
  • 1 tbsp plant-based butter
  • 1 cup plant-based milk
  • 1 tsp natural gelling agent
  • 1 tbsp fresh thyme, chopped
  • 1 tbsp fresh parsley, chopped

Dough

  • Ready-made pie crusts or 1 batch homemade dough (rolled to 1/8 inch thickness)
  • Additional plant-based butter for brushing tops

Instructions

  1. Prepare the Filling: Cook diced smoked turkey bacon in a pan over medium heat until crisp. Add diced yellow onions, carrots, and peas, and sauté until softened. Stir in cubed chicken breast and cook until no longer pink.
  2. Make the Roux: Sprinkle all-purpose flour over the mixture and cook for 1-2 minutes, stirring constantly. Slowly whisk in plant-based milk and apple cider vinegar (natural), continuing to stir until the filling thickens to a creamy consistency. Add vegetarian Worcestershire sauce (natural), chopped thyme and parsley, and season to taste. Stir in the natural gelling agent to achieve a silky texture.
  3. Prepare the Dough: If using homemade dough, roll it out on a floured surface to about 1/8 inch thick. Cut into circles or squares that fit comfortably in your hand. If using store-bought crusts, cut them into desired shapes.
  4. Assemble the Pies: Place a generous spoonful of filling onto each dough piece. Fold the dough over and seal the edges by pinching with a fork or crimping by hand. Make a small slit on top of each pie to allow steam to escape during baking.
  5. Bake to Golden Perfection: Preheat the oven to 375°F (190°C). Place pies on a baking sheet lined with parchment paper. Lightly brush the tops with melted plant-based butter for a golden, flaky crust. Bake for 25-30 minutes or until golden brown and flaky.

Notes

  • Use cold plant-based butter to ensure a flaky crust.
  • Do not overfill pies to prevent leaking during baking.
  • Chill dough before baking to maintain shape and flakiness.
  • Seal edges firmly using fork tines or fingers to avoid filling spills.
  • Allow filling to cool before assembling to prevent soggy crust.
