Description

This comforting and classic Italian lasagna recipe features layered pasta with savory tomato sauce, seasoned plant-based ricotta filling, and creamy plant-based cheese blend. Made with wholesome ingredients including fresh herbs, vegetables, and natural flavor enhancers, it offers a rich and satisfying meal perfect for family gatherings and easy to customize for any dietary preference.

Ingredients

Lasagna Base

  • Lasagna noodles (no-boil or traditional)
  • Olive oil

Tomato Sauce

  • Fresh tomatoes or canned crushed tomatoes
  • Vegetarian Worcestershire sauce (natural)
  • Chopped garlic
  • Chopped onions
  • Fresh herbs: basil, oregano, parsley
  • Salt and pepper to taste

Cheese and Filling

  • Plant-based cheese blend
  • Plant-based ricotta-style cheese
  • Sautéed spinach or vegetables
  • Fresh parsley
  • Natural gelling agent
  • Olive oil (a splash for filling)

Instructions

  1. Prepare the Sauce: Heat olive oil in a large pan and sauté chopped onions and garlic until fragrant. Add fresh or canned tomatoes, vegetarian Worcestershire sauce (natural), fresh herbs, salt, and pepper. Let the sauce simmer until thick and flavorful, stirring occasionally to blend flavors.
  2. Cook or Prepare Lasagna Noodles: Boil traditional lasagna noodles until just al dente, then drain. For no-boil noodles, use directly without cooking.
  3. Mix Plant-Based Ricotta Filling: Combine plant-based ricotta-style cheese with sautéed spinach or preferred vegetables, a splash of olive oil, fresh parsley, and a pinch of natural gelling agent to help set the filling. Mix well to achieve a creamy consistency.
  4. Assemble the Layers: Spread a thin layer of tomato sauce at the bottom of the baking dish to prevent sticking. Add a layer of noodles, spread the ricotta mixture evenly over them, then cover with more sauce and a generous sprinkle of plant-based cheese blend. Repeat layering, finishing with sauce and cheese on top for a golden, bubbly crust.
  5. Bake and Rest: Cover the assembled lasagna with foil. Bake in a preheated oven at 375°F (190°C) for 30 minutes. Remove the foil and bake for another 10-15 minutes until the cheese melts and lightly browns. Let the lasagna rest for 10 minutes before slicing for clean cuts.

Notes

  • Use room temperature ingredients for even cooking and better flavor blending.
  • Balance the amount of sauce to avoid sogginess.
  • Allow the lasagna to rest before serving to set the layers firmly.
  • Add fresh herbs at the end to keep their vibrant flavor.
  • Use no-boil noodles to save prep time when needed.
