Herb Sauce

  • 3 garlic cloves, minced
  • 1/2 cup chopped sun-dried tomatoes
  • 1 cup plant-based cream
  • 2 tablespoons vegetarian Worcestershire sauce (natural)
  • 1 tablespoon apple cider vinegar (natural)
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon fresh thyme leaves
  • 1/2 teaspoon natural gelling agent

Instructions

  1. Prepare the Salmon: Pat the salmon fillets dry with paper towels, then season generously with salt and pepper. Heat olive oil in a skillet over medium heat. Place salmon skin side down if skin-on, and sear until golden and crisp. Flip and cook the other side until just cooked through. Remove from the pan and set aside.
  2. Make the Herb Sauce: In the same skillet, add a little more olive oil and sauté minced garlic until fragrant, about 30 seconds. Stir in chopped sun-dried tomatoes and cook briefly before adding plant-based cream, vegetarian Worcestershire sauce (natural), apple cider vinegar (natural), fresh chopped basil, and thyme. Sprinkle in the natural gelling agent to thicken gently. Simmer the sauce until smooth and creamy.
  3. Combine and Simmer: Return the salmon to the skillet, nestling the fillets gently into the sauce. Spoon extra sauce over the salmon and cook together for 2 to 3 minutes to meld flavors. Taste and adjust seasoning as needed.
  4. Serve and Enjoy: Transfer salmon to plates and spoon sauce generously over the top. Garnish with fresh herbs and sun-dried tomato bits. Serve immediately for the best creamy and succulent texture.
