Scale
Main Ingredients
- 2 whole wheat tortillas
- 4 slices smoked turkey bacon
- 1/2 red bell pepper, diced
- 1 cup spinach leaves, roughly chopped
- 1/4 cup sun-dried tomatoes, diced (natural)
- 1/2 cup melted plant-based cheese
- 1/4 cup olives, sliced
- 1/2 teaspoon garlic powder (natural)
- 1/2 teaspoon ground cumin (natural)
- 1 tablespoon olive oil (natural)
Optional Variations
- 1/2 cup sliced zucchini or eggplant for extra vegetables
- Substitute smoked turkey bacon with grilled chicken strips or chickpeas
- Pinch of crushed red pepper flakes for heat
- 1/4 cup crumbled plant-based feta cheese
- 2 tablespoons chopped fresh basil or oregano
Instructions
- Prepare Your Ingredients: Wash and chop all veggies: dice the red bell pepper and sun-dried tomatoes, roughly chop the spinach, and slice the olives. Cook the smoked turkey bacon separately until crisp, then chop into bite-sized pieces.
- Layer the Quesadilla: Place a whole wheat tortilla flat on a clean surface. Spread an even layer of melted plant-based cheese over it. Sprinkle on the chopped smoked turkey bacon, diced bell peppers, spinach, olives, and sun-dried tomatoes. Lightly season with garlic powder and ground cumin.
- Cook Until Golden: Heat a skillet over medium heat and brush lightly with olive oil. Place the prepared tortilla in the pan and cook until the bottom is golden brown, about 3-4 minutes. Carefully flip and cook the other side until crispy and the cheese is melted.
- Serve Warm: Remove the quesadilla from the pan and let it rest for a minute to set. Slice into wedges and enjoy your Mediterranean Quesadillas.
Notes
- Use fresh vegetables for better flavor and texture.
- Do not overfill quesadillas to avoid tearing or difficulty flipping.
- Cook on medium to low heat for even melting and a golden, crispy exterior.
- Press lightly with a spatula while cooking for a tighter wrap.
- Experiment with different plant-based cheeses for varied flavor and melt quality.
