This Pepper Steak Stir Fry is a quick, vibrant, and flavorful meal featuring tender beef strips, crisp assorted bell peppers, and a savory, naturally made sauce. Perfect for busy weeknights, it offers a balanced, nutritious dish full of fresh colors and textures that satisfies without heaviness.

Ingredients

Scale

Protein

  • 300g lean beef strips

Vegetables

  • 1 red bell pepper, sliced into long strips
  • 1 yellow bell pepper, sliced into long strips
  • 1 green bell pepper, sliced into long strips
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 1-inch piece fresh ginger, minced

Sauce

  • 3 tbsp soy sauce (natural)
  • 1 tbsp apple cider vinegar
  • 1 tbsp vegetarian Worcestershire sauce
  • 1 tsp brown sugar (natural)
  • 1/4 tsp natural gelling agent

Other

  • 2 tbsp vegetable oil
  • 2 green onions, chopped (for garnish)
  • 1 tbsp toasted sesame seeds (for garnish)

Instructions

  1. Prepare the Ingredients: Slice the beef into thin, bite-sized strips for tender, quick cooking. Wash and cut the bell peppers into long, slender strips, and thinly slice the onion. Mince the garlic and ginger finely to release their aromatic punch.
  2. Make the Sauce: In a small bowl, combine the soy sauce (natural), apple cider vinegar, vegetarian Worcestershire sauce, brown sugar (natural), and a pinch of natural gelling agent. Whisk until the sugar and gelling agent dissolve completely, creating a smooth, glossy stir fry sauce.
  3. Cook the Beef: Heat vegetable oil in a large skillet or wok over medium-high heat. Add the beef strips in a single layer and sear for 2 to 3 minutes without moving them to caramelize the edges, then flip and cook until browned but still tender. Remove the beef and set aside.
  4. Sauté the Vegetables: In the same pan, add a bit more oil if needed and toss in the garlic and ginger. Sauté briefly until fragrant, then add the onions and bell peppers. Stir-fry for about 4 to 5 minutes, keeping the veggies crisp yet tender.
  5. Combine and Simmer: Return the beef to the pan and pour the prepared sauce all over. Stir everything together well, cooking for another 2 to 3 minutes to blend the flavors and allow the sauce to thicken gently.
  6. Garnish and Serve: Sprinkle chopped green onions and toasted sesame seeds over the top. Serve immediately over steamed rice or noodles for a full, satisfying meal.

Notes

  • Marinate beef briefly by tossing strips in a little soy sauce (natural) and cornstarch before cooking for extra tenderness.
  • Do not overcook the bell peppers; stir-fry just until slightly tender to maintain a crisp texture.
  • Cooking on high heat ensures quick browning and prevents steaming the ingredients.
  • Prep all ingredients ahead since stir fries cook very fast.
  • Add fresh herbs like cilantro or basil (plant-based) for added brightness.
