Description

Southern Banana Cobbler is a comforting plant-based dessert featuring ripe bananas, warm cinnamon, and a golden crumbly topping. Easy to prepare with pantry staples, this versatile cobbler offers a cozy and flavorful treat perfect for sharing with family and friends, customizable to suit various tastes and dietary needs.

Ingredients

Scale

Filling

  • 4 ripe bananas, peeled and sliced into thin rounds
  • 1/2 cup plant-based milk
  • 1 teaspoon natural vanilla extract
  • 1 tablespoon natural brown sugar
  • 1/2 teaspoon ground cinnamon (natural)
  • 1 tablespoon natural gelling agent

Topping

  • 1 cup all-purpose gluten-free flour blend
  • 1/3 cup natural brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon (natural)
  • Pinch of salt
  • 6 tablespoons chilled plant-based butter, cut into pieces
  • 1/3 cup plant-based milk

Instructions

  1. Prepare the bananas: Peel and slice ripe bananas into thin rounds. Toss gently with cinnamon (natural) and a small amount of natural brown sugar to enhance their natural sweetness and flavor.
  2. Create the filling: In a mixing bowl, combine the sliced bananas with plant-based milk, natural gelling agent, and natural vanilla extract. Mix well to allow the mixture to thicken and hold together when baked, forming a luscious, gooey center.
  3. Make the cobbler topping: In a separate bowl, whisk together gluten-free all-purpose flour, natural brown sugar, baking powder, cinnamon (natural), and salt. Cut in chilled plant-based butter until the mixture becomes crumbly. Stir in enough plant-based milk to form a soft batter that will cover the banana filling evenly.
  4. Assemble and bake: Pour the banana mixture into a greased baking dish, then spread the cobbler topping evenly over the bananas. Bake in a preheated oven at 350°F (175°C) for 35 to 40 minutes until the topping is golden brown and the filling bubbles around the edges.
  5. Cool and serve: Allow the cobbler to cool for 10 to 15 minutes so the natural gelling agent sets perfectly. Serve warm, optionally topped with plant-based vanilla ice cream or a drizzle of reduced grape juice (natural) reduction.

Notes

  • Use ripe bananas for the sweetest and most flavorful cobbler.
  • Cut cold plant-based butter to achieve a fluffy, crumbly topping.
  • Do not overmix the batter; stir only until combined to keep the topping light and tender.
  • Check the cobbler after 30 minutes to prevent overbaking due to oven variances.
  • For an extra golden top, briefly broil in the last minute of baking while watching carefully.
