Ingredients

Scale

Main Ingredients

  • 1 cup fresh spinach, washed and chopped
  • 3 fresh garlic cloves, minced
  • 1 lb ground beef or plant-based mince
  • 1/2 cup plant-based breadcrumbs
  • 1/4 cup plant-based dairy/cheese
  • 2 tbsp egg substitute or flaxseed mix (natural gelling agent)
  • 1 tbsp vegetarian Worcestershire sauce (natural)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Prepare the Spinach and Garlic: Thoroughly wash and chop fresh spinach leaves. Mince the garlic cloves finely. Sauté the garlic briefly in a splash of olive oil until fragrant, then add the spinach just to wilt it. Remove from heat and let cool before mixing into the meat mixture.
  2. Mix Ingredients Together: In a large bowl, combine the ground beef or plant-based mince with the wilted spinach and garlic, breadcrumbs, plant-based dairy/cheese, egg substitute or flaxseed mix, vegetarian Worcestershire sauce (natural), salt, and pepper. Mix gently but thoroughly until all ingredients are evenly incorporated.
  3. Shape the Meatballs: Using your hands or a small scoop, form the mixture into uniform balls roughly the size of a walnut. This ensures they cook evenly and look appealing.
  4. Cook the Meatballs: Heat olive oil in a pan over medium heat. Carefully place the meatballs into the pan and cook, turning occasionally, until all sides are golden brown and cooked through, about 12 to 15 minutes. For an extra juicy finish, you can gently simmer them in a tomato-based sauce or vegetable broth for 5 minutes after browning.
  5. Alternative Baking Method: Preheat the oven to 375°F (190°C). Place meatballs on a baking tray lined with parchment paper and bake for about 20 minutes, turning halfway through until golden and cooked through.

Notes

  • Use fresh spinach for the best texture and flavor.
  • Mix ingredients just until combined to keep meatballs tender.
  • Form uniform-sized meatballs for consistent cooking and appearance.
  • Allow the mixture to rest for 10 minutes before shaping to improve binding.
  • Squeeze out excess moisture from wilted spinach to avoid soggy meatballs.
