  • 1 tbsp olive oil
  • 1 tsp chopped fresh basil
  • 1 tsp chopped fresh oregano
  • 1 tsp natural gelling agent

Lasagna Noodles

  • 1/2 cup shredded plant-based mozzarella style cheese (for topping)
  • 1 tbsp olive oil (for sautéing and coating baking dish)

Instructions

  1. Prepare the Filling: Briefly sauté the fresh spinach and minced garlic in olive oil over medium heat until the spinach is just wilted. Remove from heat and let cool slightly. In a mixing bowl, combine the cooled spinach-garlic mixture with plant-based cream cheese, vegetarian Worcestershire sauce (natural), chopped fresh basil and oregano, and the natural gelling agent. Mix until smooth and easy to spread.
  2. Cook the Lasagna Noodles: Boil the lasagna noodles in salted water until al dente, firm but pliable enough to roll without breaking. Drain carefully and lay them flat on a clean towel to prevent sticking.
  3. Assemble the Roll Ups: Lay each noodle flat and spoon a generous layer of the prepared spinach and cheese filling onto it. Spread evenly and roll gently but firmly to encase the filling. Place each roll up seam side down into a baking dish that has been lightly coated with crushed tomato sauce (natural).
  4. Add Sauce and Bake: Pour the remaining crushed tomato sauce (natural) evenly over the arranged roll ups. Sprinkle shredded plant-based mozzarella style cheese on top. Bake in a preheated oven at 350°F (175°C) for 20-25 minutes, until the sauce bubbles and the cheese melts and turns lightly golden.
  5. Serve and Enjoy: Allow the roll ups to cool for a few minutes after baking to help them hold their shape for clean slices. Garnish with fresh chopped basil and a drizzle of extra virgin olive oil if desired. Serve warm as a main dish or with side salads and roasted vegetables.
