Instructions
- Prepare the Filling: Briefly sauté the fresh spinach and minced garlic in olive oil over medium heat until the spinach is just wilted. Remove from heat and let cool slightly. In a mixing bowl, combine the cooled spinach-garlic mixture with plant-based cream cheese, vegetarian Worcestershire sauce (natural), chopped fresh basil and oregano, and the natural gelling agent. Mix until smooth and easy to spread.
- Cook the Lasagna Noodles: Boil the lasagna noodles in salted water until al dente, firm but pliable enough to roll without breaking. Drain carefully and lay them flat on a clean towel to prevent sticking.
- Assemble the Roll Ups: Lay each noodle flat and spoon a generous layer of the prepared spinach and cheese filling onto it. Spread evenly and roll gently but firmly to encase the filling. Place each roll up seam side down into a baking dish that has been lightly coated with crushed tomato sauce (natural).
- Add Sauce and Bake: Pour the remaining crushed tomato sauce (natural) evenly over the arranged roll ups. Sprinkle shredded plant-based mozzarella style cheese on top. Bake in a preheated oven at 350°F (175°C) for 20-25 minutes, until the sauce bubbles and the cheese melts and turns lightly golden.
