Description

Stuffing Stuffed Mushrooms are a crowd-pleasing appetizer that combines smoky turkey bacon, plant-based cheese, and savory herbs for irresistible bite-sized treats. These mushrooms feature a flavorful stuffing bursting with textures and layers of taste, making them an easy, elegant starter perfect for any party or gathering.

Ingredients

Scale

Mushrooms

  • 12 medium to large fresh mushroom caps

Stuffing

  • 6 strips smoky turkey bacon
  • 1 cup plant-based cheese
  • 2 tablespoons vegetarian Worcestershire sauce (natural)
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon fresh sage, chopped
  • 3/4 cup breadcrumbs
  • 2 tablespoons olive oil
  • 1 teaspoon apple cider vinegar (natural)

Instructions

  1. Prepare the Mushrooms: Gently clean the mushrooms with a damp cloth. Carefully remove and finely chop the stems to use in the stuffing. Set the caps aside for filling.
  2. Cook the Smoky Turkey Bacon: Heat olive oil in a skillet over medium heat. Add turkey bacon strips and cook until crispy and fragrant. Remove from skillet and chop into small bits.
  3. Sauté the Aromatics: In the same skillet, add a bit more olive oil if needed and sauté chopped onion and garlic until translucent and golden. Add the chopped mushroom stems and cook until softened.
  4. Mix the Stuffing: In a large mixing bowl, combine cooked turkey bacon, sautéed vegetables, breadcrumbs, chopped herbs, plant-based cheese, vegetarian Worcestershire sauce (natural), and apple cider vinegar (natural). Stir until the mixture holds together but is not too wet.
  5. Stuff the Mushroom Caps and Bake: Preheat oven to 375°F (190°C). Use a spoon to generously fill each mushroom cap with the stuffing mixture. Arrange on a baking sheet and bake for about 20 minutes, or until mushrooms are tender and tops are golden brown.
  6. Serve Warm: Allow the Stuffing Stuffed Mushrooms to cool slightly before serving, allowing flavors to settle and the filling to firm up for perfect bites.

Notes

  • Choose firm, fresh mushrooms free of blemishes for best texture and presentation.
  • Do not overfill the mushroom caps to prevent spilling and ensure even cooking.
  • Pat mushrooms dry before stuffing to avoid soggy bottoms.
  • Use fresh herbs for a brighter, more vibrant flavor.
  • Lightly toast breadcrumbs beforehand to add crunch and deeper flavor.
