Ingredients

Scale

Protein

  • 2 chicken breasts, diced into bite-sized pieces

Vegetables

  • 1 bell pepper, chopped
  • 1 onion, chopped

Cheese & Sauces

  • 1 to 1 1/2 cups plant-based cheese, shredded
  • 1 tablespoon vegetarian Worcestershire sauce (natural)

Spices & Seasonings

  • 1 teaspoon garlic powder (natural)
  • 1 teaspoon chili powder (natural)
  • Salt to taste

Others

  • 2 large flour tortillas (or gluten-free tortillas for gluten-free option)
  • 2 tablespoons olive oil

Instructions

  1. Prepare the chicken: Dice chicken breasts into small, bite-sized pieces. Heat 1 tablespoon olive oil in a skillet over medium heat, then add the chicken. Season with garlic powder, chili powder, salt, and vegetarian Worcestershire sauce (natural). Cook until the chicken is cooked through and slightly caramelized, about 6-8 minutes. Remove from heat and set aside.
  2. Sauté the vegetables: In the same skillet, add a little more olive oil and toss in the chopped onions and bell peppers. Cook until tender and fragrant, about 4-5 minutes, stirring occasionally to bring out sweetness and softness.
  3. Assemble the quesadillas: Lay one tortilla flat on a clean surface. Evenly spread a generous layer of plant-based cheese over the tortilla. Add the cooked chicken and vegetable mixture evenly on top. Add another layer of plant-based cheese for extra gooeyness, then cover with a second tortilla. Press down lightly to compact the layers.
  4. Cook the quesadillas: Heat a lightly oiled skillet over medium heat. Place the assembled quesadilla in the skillet and cook for 3-4 minutes on one side until golden brown and crispy. Carefully flip using a spatula, then cook the other side another 3-4 minutes until golden and the cheese is melted inside.
  5. Serve and enjoy: Remove the quesadilla from the skillet and let it cool for a minute before slicing into wedges. Serve with your favorite dips or salsa for extra flavor.

Notes

  • Cut chicken and vegetables evenly to ensure uniform cooking.
  • Use low to medium heat while cooking quesadillas to get crisp tortillas without burning.
  • Apply cheese on both sides of the filling to help hold the quesadilla together during flipping.
  • Press down lightly on quesadilla while cooking to compact filling and improve crispiness.
  • Keep cooked quesadillas warm in a low oven if making several batches.
