The recipe is adaptable, wholesome, and great for leftovers, making it a versatile and satisfying comfort food.

Ingredients

Scale

Meatloaf Mixture

  • 1 lb ground turkey
  • 3/4 cup plant-based breadcrumbs
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, minced
  • 2 eggs (plant-based substitute, e.g., flaxseed meal mixed with water)
  • 2 tbsp vegetarian Worcestershire sauce (natural)
  • 2 tbsp tomato paste (natural)
  • 1 tbsp apple cider vinegar
  • 1/4 cup fresh parsley, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper

Optional Glaze

  • 1 tbsp tomato paste (natural)
  • 1 tsp apple cider vinegar

Instructions

  1. Preheat and Prep: Set your oven to 350°F (175°C) and lightly grease a loaf pan or line it with parchment paper for easy cleanup.
  2. Mix Ingredients: In a large bowl, gently combine ground turkey, plant-based breadcrumbs, chopped onion, minced garlic, plant-based egg substitute, vegetarian Worcestershire sauce (natural), tomato paste (natural), apple cider vinegar, fresh parsley, salt, and pepper. Mix thoroughly but avoid overworking to keep the meatloaf tender.
  3. Shape the Meatloaf: Transfer the mixture to the prepared loaf pan or shape it freehand on a baking sheet, pressing firmly and evenly to eliminate air pockets.
  4. Bake: Place the meatloaf in the oven and bake for 50-60 minutes, until the internal temperature reaches 165°F (74°C). Halfway through baking, optionally brush the top with the glaze made from tomato paste (natural) and apple cider vinegar for extra flavor and shine.
  5. Rest and Serve: Remove the meatloaf from the oven and allow it to rest for 10 minutes before slicing. This step helps retain moisture and makes slicing easier.

Notes

  • Use lean turkey to reduce grease while keeping moisture.
  • Avoid overmixing to maintain a tender texture.
  • Resting the meatloaf before slicing prevents crumbling and retains juiciness.
  • Check doneness with a meat thermometer to ensure safety and perfect cooking.
  • Add moisture-rich ingredients like grated vegetables or a natural gelling agent if desired.
