Vegetables and Aromatics
- 1 lb fresh asparagus, trimmed and cut into bite-sized pieces
- 1 medium onion, finely chopped
- 2 cloves garlic, finely chopped
Sauces and Liquids
- 1 1/2 cups plant-based milk
- 1 tsp natural gelling agent
- 1 tbsp vegetarian Worcestershire sauce (natural)
- 1 tsp apple cider vinegar
- 2 tbsp olive oil or plant-based butter
Toppings and Cheese
- 1 cup Ritz crackers, crushed finely
- 3/4 cup shredded melted (plant-based) cheese
- 1/2 cup smoked turkey bacon, cooked and crispy, chopped
Seasonings
- Salt, to taste
- Black pepper, to taste
Instructions
- Prep the asparagus and other ingredients: Trim and cut asparagus into bite-sized pieces. Finely chop onion and garlic. Preheat the oven to 375°F (190°C). Crush Ritz crackers into small crumbs and set aside.
- Sauté aromatics and cook asparagus: Heat olive oil or plant-based butter in a large skillet. Add the chopped onion and garlic and cook until soft and fragrant. Toss in the asparagus and cook for 3-4 minutes until just tender, then remove from heat.
- Make the creamy sauce: In a separate saucepan, whisk together plant-based milk, natural gelling agent, vegetarian Worcestershire sauce (natural), apple cider vinegar, salt, and pepper. Heat gently while stirring until the sauce thickens into a creamy consistency.
- Combine and assemble the casserole: Mix the cooked asparagus, sautéed onion and garlic, and crispy smoked turkey bacon into the creamy sauce. Pour the mixture into a greased baking dish and spread evenly.
- Add the Ritz cracker topping and (plant-based) cheese: Sprinkle the crushed Ritz cracker crumbs evenly over the casserole, then layer with shredded melted (plant-based) cheese. This topping will create a golden, crunchy crust after baking.
- Bake to perfection: Bake the casserole for 20-25 minutes until the topping is bubbly and golden brown. Let it rest a few minutes before serving to settle the flavors and ensure a creamy and crisp texture.
Notes
- Pick asparagus that is firm and bright green for the best texture.
- Slightly undercook asparagus before baking to maintain a tender-crisp bite.
- Crush cracker crumbs finely for a buttery, even topping that browns beautifully.
- Add natural gelling agent gradually to avoid making the sauce too thick.
- Allow casserole to cool a bit before serving so it sets up perfectly for slicing.
