Broccoli Spinach Casserole is a creamy, comforting dish that perfectly balances fresh broccoli and spinach with smoky turkey bacon and rich plant-based cheese, all brought together with natural flavors and a smooth texture. Ideal for any meal, this versatile casserole is easy to prepare, nutritious, and designed to please your whole family.

Ingredients

Scale

Vegetables

  • 2 cups broccoli florets (fresh or frozen)
  • 3 cups fresh spinach leaves, washed and roughly chopped
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced

Protein and Cheese

  • 6 slices smoked turkey bacon, sliced into bite-sized pieces
  • 1 1/2 cups plant-based cheese, shredded (reserve 1/4 cup for topping)

Liquids and Seasonings

  • 1 1/2 cups plant-based milk
  • 2 tablespoons vegetarian Worcestershire sauce (natural)
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons olive oil
  • Salt to taste
  • Ground black pepper to taste
  • 1 teaspoon natural gelling agent

Optional Topping

  • 1/2 cup panko breadcrumbs (optional)

Instructions

  1. Prepare the Vegetables: Steam the broccoli florets until just tender but still crisp and vibrant. Meanwhile, wash and roughly chop the fresh spinach leaves. In a skillet, heat olive oil over medium heat, then sauté the finely chopped onion and minced garlic until soft and fragrant to build the casserole’s flavor base.
  2. Cook the Smoked Turkey Bacon: Slice the smoked turkey bacon into bite-sized pieces. In a separate pan, cook the bacon over medium heat until golden and crispy, releasing its smoky aroma. Drain any excess fat using paper towels.
  3. Mix the Creamy Base: In a large bowl, combine the plant-based milk, vegetarian Worcestershire sauce (natural), apple cider vinegar, salt, and pepper. Whisk in the natural gelling agent thoroughly until blended. Stir in the shredded plant-based cheese, reserving some for the topping.
  4. Combine Everything: Add the steamed broccoli, sautéed onion and garlic, chopped spinach, and cooked turkey bacon to the creamy mixture. Gently fold everything together to coat all ingredients evenly.
  5. Bake Your Casserole: Transfer the combined mixture into a greased baking dish. Evenly sprinkle the reserved plant-based cheese and optional panko breadcrumbs on top. Bake at 375°F (190°C) for 25 to 30 minutes, or until the top is bubbly and lightly browned.

Notes

  • Fresh broccoli provides better texture, but frozen is a suitable alternative.
  • Steam broccoli just until tender to avoid a mushy casserole.
  • Sauté onion and garlic first to enhance flavor depth without needing extra seasoning.
  • Use quality plant-based cheese for the creamiest melt and best texture.
  • Allow the casserole to rest slightly after baking to set perfectly before serving.
