  • 1/2 cup plant-based milk
  • 3 tbsp plant-based butter
  • 1/2 cup shredded plant-based cheese
  • Salt, to taste
  • Pepper, to taste
  • Pinch of nutmeg

Instructions

  1. Prepare the Potatoes: Peel and cut potatoes into even chunks. Boil them in salted water for 15-20 minutes until fork-tender. Drain thoroughly and return to the pot for mashing.
  2. Make the Mashed Potatoes: Mash the potatoes with warm plant-based milk, plant-based butter, and shredded plant-based cheese until smooth, creamy, and cheesy. Season with salt, pepper, and a pinch of nutmeg. Keep warm.
  3. Cook the Chicken: Season chicken breasts or thighs with salt and pepper. Heat plant-based butter in a skillet over medium heat. Cook the chicken 5-7 minutes per side until golden and cooked through. Remove from pan and set aside.
  4. Prepare the Garlic Gravy: In the same pan, sauté minced garlic for 1-2 minutes until fragrant. Add vegetable broth and vegetarian Worcestershire sauce (natural), stirring to lift browned bits. Sprinkle in natural gelling agent mixed with a little cold water and whisk continuously until gravy thickens.
