Instructions

  1. Prepare the Ingredients: Finely dice the onion and mince the garlic cloves. Cut the chicken breasts into bite-sized pieces and slice the smoked turkey bacon into small strips. Chop the fresh basil and parsley for garnish.
  2. Cook the Pasta: Bring a large pot of salted water to a boil. Cook the fettuccine or linguine according to the package instructions until al dente. Drain the pasta, reserving about half a cup of pasta water, and set aside.
  3. Sauté the Chicken and Bacon: Heat olive oil in a large skillet over medium heat. Add the chicken pieces and cook until golden and cooked through. Remove the chicken and set aside. In the same skillet, add the smoked turkey bacon strips and cook until crispy. Remove and set aside with the chicken.
  4. Build the Sauce: In the same skillet, add a little more olive oil if needed and sauté the diced onion until translucent. Stir in the minced garlic and cook briefly until fragrant. Pour in the grape juice to deglaze the pan, scraping up any browned bits from the bottom. Add vegetarian Worcestershire sauce (natural) and bring the mixture to a simmer.
  5. Finish with Cream and Combine: Reduce the heat and pour in the plant-based heavy cream, stirring gently until the sauce thickens slightly. Return the cooked chicken and bacon to the skillet, then add the cooked pasta. Toss everything together until the pasta is evenly coated with the sauce. Add reserved pasta water as needed to loosen the sauce.
  6. Garnish and Serve: Sprinkle chopped basil and parsley over the dish, followed by a generous dusting of plant-based Parmesan. Serve immediately while warm and comforting.
