Ideal for sharing or enjoying any time of the day, this recipe brings delightful texture and flavor using simple pantry ingredients and a smooth glaze.

Ingredients

Scale

Dough

  • 3 1/2 cups all-purpose flour
  • 1/4 cup plant-based butter (melted)
  • 1 cup plant-based milk substitute (almond or oat milk, warmed)
  • 2 1/4 tsp active dry yeast (1 packet)
  • 1/4 cup sugar
  • 1 tsp apple cider vinegar
  • 1/2 tsp salt

Cinnamon Filling

  • 1/4 cup plant-based butter (melted)
  • 1/2 cup brown sugar
  • 2 tbsp ground cinnamon
  • 1/2 tsp vegetarian Worcestershire sauce (natural)

Glaze

  • 1 cup powdered sugar
  • 2 tbsp plant-based milk substitute
  • 1/2 tsp natural gelling agent

Instructions

  1. Prepare the Dough: Start by warming the plant-based milk substitute slightly, then stir in sugar and yeast. Let it activate until frothy. In a large bowl, whisk together flour and salt. Add melted plant-based butter, apple cider vinegar, and the yeast mixture. Mix until a dough forms, then knead for about 8 minutes until smooth and elastic. Cover and let it rise in a warm place until doubled in size, about 1 to 1.5 hours.
  2. Make the Cinnamon Filling: While the dough rises, melt plant-based butter and combine it with brown sugar, ground cinnamon, and vegetarian Worcestershire sauce (natural). Stir well to create a sweet, spicy filling.
  3. Roll and Fill: Once the dough has risen, punch it down and roll it out on a floured surface into a 12 by 18 inch rectangle. Evenly spread the cinnamon filling over the dough, reaching all edges. Starting from the long side, roll the dough into a tight log. Use a sharp knife to cut into 1.5-inch thick slices.
  4. Final Rise: Place the slices in a greased baking dish with space between each. Cover loosely and let them rise for another 30 to 45 minutes until puffy and nearly doubled in size.
  5. Bake to Perfection: Preheat the oven to 350°F (175°C). Bake the cinnamon buns for 25 to 30 minutes until golden brown and fragrant. Allow to cool slightly before glazing.
  6. Prepare the Glaze and Serve: Combine powdered sugar, plant-based milk substitute, and natural gelling agent to create a smooth glaze. Drizzle generously over warm buns for a sticky, classic finish.

Notes

  • Use room temperature ingredients to help create smoother dough and better rise.
  • Do not rush rising stages for perfect fluffy texture.
  • Roll dough tight but gently to keep filling neat and buns uniform.
  • Use a warm place like a sunny countertop or near a radiator for optimal dough rising.
  • Brush buns with plant-based butter before baking to encourage a beautiful golden crust.
