Ingredients

Scale

Dough Ingredients

  • 3 ½ cups all-purpose flour
  • 2 tablespoons sugar
  • 2 ¼ teaspoons active dry yeast (1 packet)
  • 1 teaspoon salt
  • 2 teaspoons cinnamon (natural)
  • 1 cup plant-based milk, warmed
  • ½ cup unsweetened applesauce
  • 2 tablespoons vegetarian Worcestershire sauce (natural)
  • 3 tablespoons plant-based butter, melted
  • 1 teaspoon natural gelling agent

Cinnamon Sugar Filling

  • ½ cup sugar
  • 2 teaspoons cinnamon (natural)
  • 2 tablespoons plant-based butter, melted (for spreading)

Instructions

  1. Prepare the Dough: Warm the plant-based milk until just warm to the touch. Dissolve the active dry yeast and a bit of sugar in the milk and let it activate for about 5 minutes. In a large bowl, combine the flour, salt, and cinnamon. Add the applesauce, melted plant-based butter, vegetarian Worcestershire sauce, and the activated yeast mixture. Mix until a smooth dough forms.
  2. Knead the Dough: Turn the dough onto a lightly floured surface and knead for 8 to 10 minutes until elastic and slightly tacky. Add flour sparingly if it begins to stick. Kneading develops the gluten for structure and softness.
  3. First Rise: Place the dough in a greased bowl. Cover with a damp cloth and let it rise in a warm place until doubled in size, about 1 to 1 ½ hours.
  4. Prepare the Cinnamon Sugar Filling: Mix sugar with additional cinnamon in a small bowl to create the filling.
  5. Shape and Fill the Bread: Punch down the risen dough and roll it out into a rectangle on a floured surface. Spread a thin layer of melted plant-based butter over the dough. Sprinkle the cinnamon sugar filling evenly on top. Roll the dough tightly from one edge to form a log.
  6. Second Rise and Bake: Place the rolled dough in a parchment-lined loaf pan. Cover and let it rise for 30 to 40 minutes until puffed. Preheat the oven to 350°F (175°C) and bake the bread for 30 to 35 minutes until golden brown and a toothpick inserted comes out clean. Allow to cool slightly before slicing.

Notes

  • Measure flour using the spoon-and-level method for best texture.
  • Use warm, not hot, liquid to activate yeast properly.
  • Allow dough to fully double in size for a fluffy crumb.
  • Use freshly ground cinnamon (natural) for the richest aroma.
  • Slice the bread when slightly warm to prevent crumbling.
