Ingredients
Scale
Vegetables
- 2 cups fresh spinach, rinsed and roughly chopped
- 1 small onion, diced
- 2 cloves garlic, finely chopped
Dairy & Eggs
- 1 cup cottage cheese (plant-based)
- 1/2 cup plant-based cheese, shredded
- 4 large eggs (room temperature)
Protein
- 4 slices smoked turkey bacon, cooked and chopped
Seasonings & Others
- 1 tablespoon vegetarian Worcestershire sauce (natural)
- 1/2 teaspoon natural gelling agent
- Salt, to taste
- Freshly ground black pepper, to taste
Instructions
- Prepare the Ingredients: Preheat your oven to 350°F (175°C). Rinse and roughly chop the fresh spinach. Dice the onion and finely chop the garlic. Cook the smoked turkey bacon in a skillet over medium heat until crispy, then chop it into bite-sized pieces. Set everything aside to cool slightly.
- Sauté the Vegetables: In the same skillet, sauté the chopped onion and garlic until softened and fragrant. Add the spinach and cook just until wilted to intensify the flavors and reduce excess moisture.
- Mix the Filling: In a large mixing bowl, whisk together the eggs, cottage cheese (plant-based), plant-based cheese, and vegetarian Worcestershire sauce (natural). Stir in the cooled sautéed spinach mixture and chopped smoked turkey bacon. Season with salt, black pepper, and natural gelling agent to help set the quiche.
- Bake to Perfection: Pour the filling into a greased or lined oven-safe dish. Bake for 35 to 40 minutes until golden on top and set throughout. The quiche should be firm with a slight jiggle at the center.
- Cool and Serve: Let the quiche cool for at least 10 minutes before slicing. This resting time helps it finish setting and allows for neater slices.
Notes
- Drain excess moisture well from spinach and vegetables after cooking to avoid a watery quiche.
- Use fresh spinach and high-quality plant-based cheese for the best flavor and texture.
- Use room temperature eggs to achieve a smoother and more even filling.
- Adjust the amount of natural gelling agent carefully to get the perfect set without a rubbery texture.
- Allow the quiche to rest before slicing for cleaner, firmer cuts and richer taste.
