Ingredients
Scale
Mushrooms and Vegetables
- 12 oz fresh cremini or button mushrooms, cleaned and sliced
- 1 small yellow onion, finely chopped
- 3 garlic cloves, finely chopped
- 2 tbsp fresh rosemary, chopped
- 2 tbsp fresh thyme, chopped
Protein and Seasoning
- 4 oz smoked turkey bacon, diced
- 2 tsp vegetarian Worcestershire sauce (natural)
- 1 tbsp apple cider vinegar (natural)
- 1/2 tsp ground black pepper
- 1/2 tsp sea salt
Cooking and Texture
- 2 tbsp extra virgin olive oil (natural)
- 1 tsp natural gelling agent (optional)
Instructions
- Prepare Your Ingredients: Clean the mushrooms with a damp towel and slice evenly. Dice the smoked turkey bacon, finely chop the onion, garlic, rosemary, and thyme to have all ingredients ready.
- Sauté the Bacon and Vegetables: Heat extra virgin olive oil (natural) in a large skillet over medium heat. Add the smoked turkey bacon and cook until crisp. Remove bacon pieces and set aside. Add onions and garlic to the pan and cook until fragrant and translucent.
- Cook the Mushrooms: Add sliced mushrooms to the skillet and sauté until golden and tender, allowing moisture to release and flavors to concentrate.
- Combine and Season: Return cooked bacon to the pan with mushrooms and onions. Stir in fresh rosemary, thyme, vegetarian Worcestershire sauce (natural), apple cider vinegar (natural), sea salt, and black pepper. Mix well and let flavors meld gently on low heat for a few minutes.
- Add Natural Gelling Agent (Optional): If making a layered or stuffed version, dissolve natural gelling agent in a small amount of liquid and add it to the mixture, stirring well to bind with a tender texture.
Notes
- Choose firmer mushrooms like cremini or shiitake to retain texture when cooking.
- Cook mushrooms in batches to avoid overcrowding and achieve a caramelized color.
- Use fresh herbs for the brightest flavor and aroma.
- Cook bacon first to render fat that flavors the onions and mushrooms perfectly.
- Adjust salt and acidity toward the end of cooking for balanced flavor.
