Ingredients
Potatoes
- Small to medium red potatoes – quantity as needed (about 1.5 pounds)
Garlic Olive Oil Coating
- Fresh garlic cloves, minced – 4 cloves
- Olive oil (natural) – 3 tablespoons
- Fresh rosemary or thyme, chopped – 1 tablespoon
- Sea salt – 1 teaspoon (or to taste)
- Freshly ground black pepper – ½ teaspoon (or to taste)
Instructions
- Boil the Potatoes: Wash the red potatoes thoroughly. Place them in a large pot filled with salted boiling water and cook until tender when pierced with a fork, about 15 to 20 minutes. This ensures the potatoes are soft enough to smash without falling apart.
- Prepare the Garlic Olive Oil: While the potatoes boil, in a small bowl combine the minced garlic, olive oil (natural), chopped fresh rosemary or thyme, a pinch of sea salt, and freshly ground black pepper. Mix well to infuse the oil with aromatic flavors.
- Smash the Potatoes: Drain the cooked potatoes and let them cool slightly until easy to handle. Place the potatoes on a baking sheet lined with parchment paper or a silicone mat. Using the bottom of a sturdy glass or a potato masher, gently press down on each potato until flattened to about ½ inch thick, taking care they stay in one piece.
- Brush with Garlic Oil and Bake: Generously brush each smashed potato with the prepared garlic olive oil mixture, ensuring even coverage for maximum flavor and crispiness. Bake in a preheated oven at 220°C (425°F) for 25 to 30 minutes until edges are golden brown and crispy, turning the potatoes halfway through for even cooking.
Notes
- Choose the right potatoes: Red potatoes hold their shape well and crisp up nicely.
- Dry potatoes thoroughly after boiling to achieve crispier edges before smashing.
- Do not over-flatten potatoes; keep some thickness for soft centers.
- Bake at high heat to develop delicious crispy edges.
- Brush garlic oil on potatoes before baking and again halfway through for extra flavor.
