Ingredients

Scale

Salad Ingredients

  • 2 cups cooked elbow macaroni or rotini pasta
  • 6 hard-boiled eggs, peeled and chopped
  • 4 slices smoked turkey bacon, cooked crisp and chopped
  • 1 cup shredded plant-based cheese
  • 3 green onions, finely chopped
  • 1/2 cup finely chopped celery
  • 2 tablespoons fresh dill, finely chopped
  • 1 teaspoon natural gelling agent
  • Salt and pepper, to taste

Dressing Ingredients

  • 1/2 cup natural mayonnaise
  • 1 tablespoon Dijon mustard (natural)
  • 1 tablespoon apple cider vinegar (natural)

Instructions

  1. Prepare the ingredients: Cook the pasta according to package instructions until al dente. Drain and rinse under cold water to cool. Hard-boil the eggs, peel, and finely chop them. Cook the smoked turkey bacon until crisp and chop into bite-sized pieces. Finely chop the green onions, celery, and fresh dill.
  2. Make the deviled egg dressing: In a large mixing bowl, combine the chopped eggs with natural mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper. Stir gently to create a creamy and tangy filling that will coat the pasta beautifully.
  3. Combine the salad: Add the cooled pasta, smoked turkey bacon, green onions, celery, dill, and shredded plant-based cheese to the bowl with the deviled egg mixture. Gently fold all ingredients together until everything is evenly coated and well combined.
  4. Set and chill: Sprinkle the natural gelling agent evenly over the salad and fold it in. Cover the salad and refrigerate for at least one hour to allow the flavors to meld and the texture to firm up slightly before serving.

Notes

  • Cook pasta just until al dente to avoid mushy texture after chilling.
  • Refrigerate the salad thoroughly to enhance flavor melding.
  • Use fresh dill and green onions for the best vibrant flavor.
  • Adjust salt and pepper seasoning after chilling as flavors intensify.
  • Fold ingredients gently to maintain texture and appearance.
