Description

Garden Tortellini Pasta Salad is a refreshing and vibrant dish combining tender plant-based cheese tortellini, fresh crunchy vegetables, smoky turkey bacon, and a zesty apple cider vinegar dressing. Perfect for a quick lunch or a crowd-pleasing side, it offers a balanced mix of textures and flavors that can be enjoyed chilled or at room temperature.

Ingredients

Scale

Pasta and Protein

  • 12 oz cheese (plant-based) tortellini
  • 6 slices smoked turkey bacon

Fresh Vegetables and Herbs

  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup red bell pepper, diced
  • 1/4 cup red onion, thinly sliced
  • 2 tbsp fresh basil, minced
  • 2 tbsp fresh parsley, minced

Dressing

  • 3 tbsp apple cider vinegar (natural)
  • 4 tbsp olive oil (natural)
  • 1 tbsp vegetarian Worcestershire sauce (natural)
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Cook the tortellini: Boil salted water and cook the cheese (plant-based) tortellini according to package instructions until al dente. Drain and rinse with cold water to stop cooking and keep a firm yet tender texture.
  2. Prepare the vegetables: While tortellini cooks, halve the cherry tomatoes, dice cucumber and red bell pepper, and thinly slice red onion. Mince fresh basil and parsley to release maximum flavor.
  3. Cook the smoked turkey bacon: In a skillet, cook the smoked turkey bacon until crisp. Cool slightly, then chop into bite-sized pieces for a smoky crunch.
  4. Make the dressing: Whisk together apple cider vinegar (natural), olive oil (natural), vegetarian Worcestershire sauce (natural), salt, and pepper in a small bowl until emulsified to create a tangy dressing.
  5. Combine all ingredients: In a large bowl, gently toss cooked tortellini, prepared vegetables, smoked turkey bacon, and fresh herbs. Pour dressing over the mixture and mix thoroughly to coat evenly.
  6. Chill and serve: Refrigerate the salad for at least 30 minutes to allow flavors to meld. Serve chilled for maximum refreshment and flavor balance.

Notes

  • Cook pasta perfectly to keep tortellini tender with a slight bite.
  • Use fresh herbs for vibrant aroma and bright flavor.
  • Chill before serving to allow dressing to penetrate all ingredients.
  • If salad seems dry, add a splash of reserved pasta water to loosen texture.
  • Adjust seasoning with salt, pepper, or vinegar just before serving.
