Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Drain, reserving one cup of pasta water, and set aside.
  2. Prepare the Turkey Bacon and Veggies: While the pasta cooks, heat olive oil in a large pan over medium heat. Add the chopped smoked turkey bacon and cook until slightly crispy. Add the minced garlic, halved cherry tomatoes, and fresh spinach leaves. Sauté until the spinach wilts and the tomatoes soften.
  3. Make the Creamy Goat Cheese Sauce: Lower the heat and add crumbled soft goat cheese (plant-based) to the pan. Stir gently until the cheese melts and blends with the veggies and turkey bacon. Stir in the apple cider vinegar (natural) and vegetarian Worcestershire sauce (natural). If the sauce is too thick, add reserved pasta water gradually to loosen it to your preferred consistency.
