This Hamburger Potato Casserole is a warm and hearty comfort meal combining tender sliced potatoes, savory ground beef, and melty plant-based cheese. Easy to prepare and perfect for family dinners, this one-dish meal delivers rich flavors and creamy textures with simple pantry ingredients and minimal fuss.

Ingredients

Scale

Main Ingredients

  • 1 lb ground beef
  • 4 large potatoes, peeled and thinly sliced
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 2 tbsp vegetarian Worcestershire sauce (natural)
  • 2 tbsp tomato paste (natural)
  • 1 tbsp apple cider vinegar (natural)
  • 1 ½ cups grated plant-based cheese
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • 2 tbsp fresh parsley, chopped

Optional Ingredients

  • 1 tsp natural gelling agent

Instructions

  1. Prepare the Potatoes: Peel and slice the potatoes thinly to ensure even cooking and layering. Parboil the potato slices in boiling water for about 5 minutes until just tender but still firm. Drain well and set aside.
  2. Cook the Beef Mixture: Heat olive oil in a large skillet over medium heat. Add chopped onions and minced garlic, sautéing until softened and fragrant. Add the ground beef, cooking thoroughly until browned with no pink remaining. Stir in vegetarian Worcestershire sauce (natural), tomato paste (natural), apple cider vinegar (natural), paprika, salt, and pepper. Let the mixture simmer on low heat for 3-4 minutes to meld the flavors.
  3. Assemble the Casserole: Grease a casserole dish. Layer half of the potato slices on the bottom. Spoon half of the beef mixture evenly over the potatoes and sprinkle half of the grated plant-based cheese on top. Repeat with the remaining potato slices, beef mixture, and cheese. If using, mix the natural gelling agent into the beef mixture before assembling to help maintain creamy texture.
  4. Bake to Perfection: Cover the casserole with foil and bake at 375°F (190°C) for 30 minutes. Remove the foil and bake for an additional 15 minutes to brown the cheese on top. Allow the casserole to rest for 10 minutes before serving so it sets and flavors meld.

Notes

  • Choose starchy potatoes like Russet or Yukon gold for best texture and flavor absorption.
  • Parboiling potatoes ensures even cooking and tender layers without mushiness.
  • Use quality plant-based cheese for optimal melt and taste.
  • Let the casserole rest before serving to make slicing easier and flavors better melded.
  • Season each layer with salt and pepper to build deep, balanced flavor.
