Ingredients

Scale

Chicken and Herbs

  • 46 skin-on, bone-in chicken pieces
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp fresh parsley, chopped
  • 4 garlic cloves, whole

Creamy White Sauce

  • 1 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 cup plant-based cream
  • 1 tbsp apple cider vinegar (natural)
  • 1 tbsp vegetarian Worcestershire sauce (natural)
  • 1 tsp natural gelling agent
  • Salt and black pepper to taste

Instructions

  1. Prepare the Chicken and Herbs: Pat the chicken pieces dry thoroughly to ensure maximum crispiness. Rub each piece generously with olive oil, salt, black pepper, and a blend of chopped fresh rosemary, thyme, and parsley. This will build a flavorful foundation for roasting.
  2. Roast the Chicken: Arrange the seasoned chicken pieces in a roasting pan or baking dish. Scatter whole garlic cloves around the chicken for added aroma. Roast in a preheated oven at 425°F (220°C) for 35 to 40 minutes, or until the skin is golden and crispy and the meat reaches an internal temperature of 165°F (74°C).
  3. Make the Creamy White Sauce: While the chicken roasts, heat olive oil in a pan over medium heat. Sauté minced garlic until fragrant. Stir in the plant-based cream, apple cider vinegar (natural), and vegetarian Worcestershire sauce (natural). Bring the mixture to a gentle simmer, then gradually whisk in the natural gelling agent until the sauce thickens to a smooth, silky consistency. Season with salt and black pepper to taste. Avoid boiling to maintain texture.
  4. Combine and Serve: Once the chicken is done roasting, transfer to a serving platter. Pour the creamy white sauce over or alongside the chicken. Garnish with additional fresh herbs for an appealing presentation and extra flavor boost. Let the chicken rest 5 to 10 minutes before serving to lock in juices.

Notes

  • Pat the chicken dry completely before seasoning to achieve a crispy skin.
  • Use fresh herbs for vibrant and bright flavors.
  • Simmer the sauce gently; do not boil to prevent splitting.
  • Check chicken doneness with a meat thermometer set to 165°F (74°C).
  • Allow the chicken to rest after roasting for optimal juiciness.
