Ingredients

Scale

Main Ingredients

  • 3 1/2 cups all-purpose flour
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1 1/4 cups warm water (about 110°F / 43°C)
  • 2 tbsp olive oil (natural), plus extra for brushing
  • 2 tsp salt
  • 1 tbsp sugar (natural)

Optional Variations

  • 1 tbsp chopped fresh rosemary, thyme, or oregano (natural) for herb-infused bread
  • 12 cloves minced garlic or 1 tsp garlic powder (natural) for garlic bread
  • 1/4 cup chopped sun-dried tomatoes (natural) and 1 tbsp chopped fresh basil for Mediterranean flair
  • Substitute half the all-purpose flour with whole wheat flour for whole wheat blend
  • Seeds such as sesame, poppy, or flax for seeded Italian bread, to sprinkle on top or mix into the dough

Instructions

  1. Activate the Yeast: Dissolve the active dry yeast and sugar (natural) in warm water. Stir gently until the mixture becomes frothy and bubbly, indicating the yeast is active.
  2. Mix Ingredients: In a large bowl, combine the all-purpose flour, salt, and olive oil (natural). Pour in the yeast mixture and stir until the dough starts to come together. Add any optional herbs, garlic, sun-dried tomatoes, or seeds at this stage if using.
  3. Knead the Dough: Turn the dough onto a floured surface and knead for 8 to 10 minutes until it is smooth, elastic, and slightly tacky but not sticky. This develops the gluten structure necessary for perfect bread texture.
  4. First Rise: Place the dough in an oiled bowl, cover it with a clean kitchen towel, and leave it in a warm spot to rise until doubled in size, about 1 to 1.5 hours.
  5. Shape the Loaf: Gently punch down the risen dough to release air bubbles, then shape it into a classic Italian loaf shape or baguette style.
  6. Second Rise: Place the shaped dough on a parchment-lined baking tray and allow it to rise uncovered for 30 to 45 minutes.
  7. Bake the Bread: Preheat the oven to 375°F (190°C). Optionally brush the top with olive oil (natural) and sprinkle coarse salt. Bake for 25 to 30 minutes until golden brown and hollow sounding when tapped underneath.

Notes

  • Use warm water to activate yeast without killing it.
  • Allow dough enough time to double in size for an airy crumb.
  • Knead thoroughly to develop gluten for proper structure.
  • Cool bread completely before slicing to maintain texture.
  • Add a small pan of water in the oven while baking for a crispier crust.
