Perfect for celebrations or everyday teatime, they are both elegant and easy to prepare.

Ingredients

Scale

Dough Ingredients

  • 2 1/2 cups all-purpose flour
  • 3/4 cup plant-based butter, softened
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1/2 cup sour cream (plant-based)
  • 1 tsp baking powder
  • 1 tsp vanilla extract (natural)

Filling

  • 1/2 cup fruit preserves (raspberry, apricot, blueberry, or mixed berry preserve)

Plant-Based Glaze

  • 1 cup powdered sugar
  • 23 tbsp plant-based milk
  • 1/2 tsp natural gelling agent

Instructions

  1. Prepare the Dough: In a large bowl, beat the softened plant-based butter and granulated sugar with a hand or stand mixer until light and fluffy. Add the eggs, plant-based sour cream, and natural vanilla extract, mixing until smooth. In a separate bowl, whisk together the all-purpose flour and baking powder, then gradually add to the wet ingredients. Gently combine until the dough forms, avoiding overmixing to maintain tenderness.
  2. Chill the Dough: Wrap the dough in plastic wrap and refrigerate for at least 1 hour to firm up, making it easier to roll and shape.
  3. Roll and Cut: Lightly flour a clean surface and roll the dough out to about 1/4 inch thickness. Use a cookie cutter or glass to cut circles and place them on a parchment-lined baking sheet for even baking.
  4. Add Fruit Preserves: Place a dollop of the chosen fruit preserves in the center of each dough circle. Use a moderate amount to prevent leaking during baking.
  5. Shape and Seal: Fold the edges of each cookie slightly over the preserves to create an open, rounded pocket. Press gently to seal while keeping the filling visible.
  6. Bake: Preheat oven to 375°F (190°C). Bake the cookies for 15 to 18 minutes or until the edges turn a light golden brown. Monitor closely to avoid drying out.
  7. Glaze and Cool: Let the cookies cool on a wire rack for 5 minutes, then drizzle or brush with the plant-based glaze for a shiny, sweet finish.

Notes

  • Use cold plant-based butter before mixing for a flaky dough texture.
  • Do not overfill the cookies with preserves to prevent sogginess or leaks.
  • Roll the dough evenly to ensure uniform baking and texture.
  • Use eggs and plant-based sour cream at room temperature for smooth blending.
  • Ovens vary; check the cookies a few minutes before the minimum baking time to avoid overbaking.
