Description

Enjoy a bright and refreshing Lemon Asparagus Pasta with zesty lemon, tender asparagus, and creamy plant-based cheese for a light, vibrant meal that feels like spring in every bite. This dish perfectly balances crisp vegetables with the tang of fresh lemon and the smoothness of plant-based cheese (plant-based), delivering a flavorful and wholesome pasta experience that’s both satisfying and simple to make.

Ingredients

Scale

Pasta and Vegetables

  • 8 oz spaghetti or your favorite long pasta
  • 1 lb fresh asparagus, trimmed and cut into bite-sized pieces

Sauce

  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Juice and zest of 1 large lemon
  • Pinch of salt
  • Pinch of black pepper
  • 1 teaspoon natural gelling agent mixed with a splash of grape juice (natural)

Finishing Touches

  • 1/2 cup plant-based cheese (plant-based), shredded or crumbled
  • 2 tablespoons fresh parsley or basil, chopped

Instructions

  1. Prepare the asparagus: Trim the tough ends off the asparagus and cut the stalks into bite-sized pieces. Blanch them in boiling salted water for 2 to 3 minutes until bright green and tender-crisp, then drain and set aside.
  2. Cook the pasta: Bring a large pot of salted water to a boil and cook the spaghetti until al dente according to the package instructions. Drain, reserving a cup of pasta water for later.
  3. Make the lemon sauce: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant and golden, about 1 minute. Stir in fresh lemon juice, lemon zest, and a pinch of salt and pepper. Add a natural gelling agent mixed with a splash of grape juice (natural) to create a smooth, creamy consistency, stirring continuously.
  4. Combine pasta and asparagus: Add the cooked pasta and asparagus pieces to the skillet, tossing everything together to coat evenly with the lemony sauce. If needed, add reserved pasta water gradually to loosen the sauce and help it cling to the noodles perfectly.
  5. Finish with plant-based cheese: Sprinkle in the plant-based cheese (plant-based) and fresh herbs, tossing gently until everything is warmed through and the cheese melts into a luscious, rich sauce coating every strand of pasta.

Notes

  • Choose fresh asparagus with firm stalks and tightly closed tips for best texture and taste.
  • Reserve pasta water to adjust sauce thickness and add silkiness.
  • Use freshly squeezed lemon juice for enhanced bright flavor.
  • Cook pasta al dente to keep the dish light and satisfying.
  • Add herbs last to preserve their fresh flavor and vibrant color.
