Ingredients

Scale

Dough Ingredients

  • 2 1/4 tsp active dry yeast
  • 1 cup warm plant-based milk
  • 2 tbsp brown sugar (natural)
  • 1 tsp apple cider vinegar
  • 3 cups all-purpose flour
  • 1 tsp cinnamon (natural flavoring)
  • 4 tbsp plant-based butter, melted

Coating Mix

  • 1 cup brown sugar (natural)
  • 2 tsp cinnamon (natural flavoring)
  • 4 tbsp plant-based butter, melted (for dipping)

Glaze

  • 1/2 cup brown sugar (natural)
  • 2 tbsp plant-based butter, melted
  • 1 tsp natural gelling agent
  • Optional: 1 tsp vegetarian Worcestershire sauce (natural)

Optional Add-ins

  • 1/2 cup chopped pecans, walnuts, or almonds
  • 1/2 cup dried cranberries, raisins, or chopped dates
  • Mini dark chocolate chips (quantity as preferred)
  • Spices like cardamom or nutmeg (1/2 tsp each, optional)

Instructions

  1. Prepare the Dough: Activate the yeast by dissolving it in warm plant-based milk mixed with 2 tablespoons of brown sugar (natural) and 1 teaspoon of apple cider vinegar. Let it sit until foamy, about 5-10 minutes. In a large bowl, combine the flour, 1 teaspoon cinnamon (natural flavoring), and the yeast mixture. Add melted plant-based butter and knead gently until the dough is smooth and elastic, then set aside to rise.
  2. Shape and Coat the Dough Balls: Divide the dough into small equal pieces and roll each into a ball. Dip each ball into melted plant-based butter, then roll it in a mixture of brown sugar (natural) and cinnamon (natural flavoring) until fully coated. If using, toss in nuts, dried fruits, mini chocolate chips, or additional spices with the dough balls before coating.
  3. Assemble in a Bundt Pan: Grease a bundt pan well with plant-based butter or use a silicone pan. Layer the coated dough balls closely in the pan, optionally sprinkling nuts or dried fruits between layers to add texture and flavor.
  4. Let the Dough Rise Again: Cover the pan loosely and allow the dough balls to rise for 30 to 45 minutes or until puffed and soft.
  5. Bake to Golden Perfection: Preheat the oven to 350°F (175°C). Bake the Monkey Bread for 30 to 40 minutes or until the top is golden brown and the interior is gooey but cooked through. Keep an eye on it to avoid overbaking.
  6. Add a Glaze or Syrup: While the bread cools slightly, prepare a glaze by heating the brown sugar (natural), melted plant-based butter, natural gelling agent, and optional vegetarian Worcestershire sauce (natural). Drizzle the warm glaze evenly over the bread and serve warm for the best experience.

Notes

  • Use a kitchen scale to measure flour and sugar precisely for consistent results.
  • Keep plant-based milk warm, not hot, when activating yeast to avoid killing it.
  • Ensure each dough ball is evenly coated in cinnamon sugar for balanced flavor.
  • Do not skip the second rise to achieve a soft, fluffy texture.
  • Use a well-greased non-stick or silicone bundt pan to prevent sticking.
  • Store leftovers covered tightly at room temperature for up to two days to keep softness.
  • Freeze tightly wrapped Monkey Bread for up to two months; thaw overnight before reheating.
  • Reheat wrapped in a damp cloth in a low oven or microwave to restore freshness.
