Ingredients

Scale

Dough

  • 3 1/2 cups all-purpose flour
  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 1 cup warm water
  • 1/4 cup sugar
  • 1 cup plant-based milk
  • 1/4 cup plant-based butter, melted
  • 1 tablespoon orange zest
  • 1/2 teaspoon salt

Orange Filling

  • 1/2 cup fresh orange juice
  • 1 tablespoon orange zest
  • 1/4 cup sugar
  • 1 teaspoon vegetarian Worcestershire sauce (natural)
  • 2 tablespoons plant-based butter
  • 1 teaspoon natural gelling agent

Glaze

  • 1 cup powdered sugar
  • 2 tablespoons fresh orange juice
  • 1/2 teaspoon vanilla extract (natural)

Instructions

  1. Prepare the Dough: Begin by dissolving the active dry yeast in warm water with a pinch of sugar to activate it, creating a bubbly, foamy base. In a mixing bowl, combine all-purpose flour, sugar, and salt. Add plant-based milk, melted plant-based butter, orange zest, and the yeast mixture. Mix until a smooth dough forms. Knead gently for 8 to 10 minutes until the dough is soft and elastic.
  2. First Rise: Place the dough in a greased bowl, cover lightly with a damp cloth, and let it rise in a warm spot until it doubles in size, about 1 to 1.5 hours. This ensures fluffy rolls.
  3. Prepare the Orange Filling: While the dough rests, combine fresh orange juice, orange zest, sugar, vegetarian Worcestershire sauce (natural), and plant-based butter in a saucepan over low heat. Stir in the natural gelling agent and simmer until the mixture is glossy, smooth, and thickened. Set aside to cool slightly.
  4. Shape and Fill the Rolls: After the dough has risen, roll it out on a floured surface into a rectangle. Spread the orange filling evenly over the dough. Roll the dough tightly into a log and slice it into even rolls. Place the rolls on a parchment-lined baking tray, leaving space between each.
  5. Second Rise and Bake: Let the sliced rolls rise again for 30 to 45 minutes until puffed. Preheat the oven to 180°C (350°F). Bake the rolls for 20 to 25 minutes or until golden brown.
  6. Glaze the Rolls: Mix powdered sugar with fresh orange juice and vanilla extract (natural) to create a smooth glaze. Drizzle generously over the warm rolls. Serve fresh for the best flavor.

Notes

  • Activate yeast properly with warm water that is not too hot to ensure effective blooming.
  • Knead dough until elastic, but avoid overworking to prevent dense rolls.
  • Allow dough to rise gently in a warm environment to achieve optimal fluffiness.
  • Spread filling evenly to avoid dry or soggy spots inside the rolls.
  • Apply glaze while rolls are still warm to enhance absorption and sweetness.
