Description

Seared Scallops with Yuzu Garlic Butter is a vibrant seafood dish featuring tender scallops with a golden sear, bright citrusy yuzu notes, aromatic garlic butter, and smoky crunchy smoked turkey bacon. This quick and elegant recipe delivers a perfect balance of flavors and textures, ideal for weeknight dinners or special occasions.

Ingredients

Scale

Seafood & Protein

  • 8 oz fresh dry-packed scallops
  • 3 slices smoked turkey bacon

Sauce & Seasonings

  • 2 tbsp plant-based unsalted butter
  • 2 cloves fresh garlic, finely minced
  • 1 tbsp natural yuzu juice
  • 1 tsp natural apple cider vinegar
  • Salt, to taste
  • Black pepper, to taste

Cooking Oils & Garnish

  • 2 tbsp natural olive oil
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Prepare the Scallops: Pat dry the scallops thoroughly with paper towels to ensure a crispy crust when seared. Lightly season both sides with salt and pepper, then set aside while preparing other ingredients.
  2. Cook Smoked Turkey Bacon: In a large skillet over medium heat, cook the smoked turkey bacon until crispy. Remove and place on a paper towel-lined plate to drain excess fat, then chop into bite-sized pieces.
  3. Make Yuzu Garlic Butter: Using the same skillet, reduce heat to low and add plant-based unsalted butter. Once melted, stir in the finely minced garlic and cook gently until fragrant, about 1 minute. Add a splash of apple cider vinegar and natural yuzu juice, stirring to combine and create a luscious, tangy butter sauce.
  4. Sear the Scallops: Heat natural olive oil over medium-high heat in a clean pan. Once hot, add scallops in a single layer without overcrowding. Sear each side for 2-3 minutes until a golden crust forms and the scallops are opaque in the center.
  5. Combine and Serve: Return the chopped smoked turkey bacon to the pan with the yuzu garlic butter. Gently toss the seared scallops in the sauce until evenly coated. Garnish with fresh chopped parsley before plating.

Notes

  • Always use dry-packed scallops for the best sear and natural sweetness.
  • Ensure your skillet is preheated and very hot to achieve a perfect golden crust.
  • Do not move scallops once placed in the pan to allow a crisp sear to develop.
  • Use fresh yuzu juice for genuine bright citrus flavor.
  • Cook garlic gently on low heat to avoid burning and bitterness.
