Description

This Thai Peanut Noodle Salad is a fresh and vibrant dish combining tender rice noodles with crisp colorful vegetables, smoky turkey bacon, and a luscious creamy peanut sauce (natural). Peanut Sauce (natural)

  • 1/3 cup creamy peanut butter (natural)
  • 2 tbsp fresh lime juice
  • 1 tbsp apple cider vinegar
  • 1 tbsp vegetarian Worcestershire sauce
  • 2 cloves garlic, minced
  • 1 tbsp grated fresh ginger
  • 1 tsp natural sesame oil
  • 24 tbsp water (to thin sauce)

Vegetables & Herbs

  • 1 cup thinly sliced colorful bell peppers
  • 1 cup shredded carrots
  • 3 green onions, thinly sliced
  • 1/4 cup chopped fresh cilantro
  • Chili flakes (optional, to taste)

Protein

  • 6 slices turkey bacon, cooked and chopped

Instructions

  1. Prepare the Noodles: Soak or boil the rice noodles according to package instructions until tender but still firm to the bite. Rinse under cold water to stop cooking and drain well to prevent clumping.
  2. Make the Peanut Sauce (natural): In a mixing bowl, whisk together creamy peanut butter (natural), fresh lime juice, apple cider vinegar, vegetarian Worcestershire sauce, minced garlic, grated ginger, natural sesame oil, and water. Adjust water to reach a smooth, pourable consistency. Taste and adjust sweetness or acidity as needed.
  3. Cook the Turkey Bacon: In a skillet over medium heat, cook turkey bacon until crispy. Transfer to paper towels to drain excess fat. Once cooled, chop into bite-sized pieces.
  4. Chop and Prepare Veggies: Slice bell peppers into thin strips, shred carrots, thinly slice green onions, and roughly chop fresh cilantro. Prepare additional veggies if desired.
  5. Combine and Toss: In a large bowl, gently toss the cooked noodles, chopped veggies, turkey bacon, and peanut sauce (natural) until evenly coated. Add chili flakes if desired. Garnish with extra cilantro before serving.
