Instructions

  1. Prepare the Dough: Warm plant-based milk until lukewarm, then stir in apple cider vinegar and instant yeast. Let sit for 5 minutes until foamy. In a large bowl, combine flour, softened plant-based butter, brown sugar, eggs (or substitute), salt, and the yeast mixture. Knead until dough is smooth and elastic. Cover and let rise for 1 to 1.5 hours until doubled in size.
  2. Make the Cinnamon Filling: While the dough rises, mix softened plant-based butter, brown sugar, and cinnamon until smooth and spreadable. Set aside.
  3. Roll Out and Fill: Roll the risen dough on a floured surface into a large rectangle. Spread cinnamon filling evenly over the dough, leaving a small border. Roll up tightly starting from the long edge into a log.
  4. Slice and Second Rise: Cut the rolled dough into 12 equal slices and place them spaced in a greased baking pan. Cover lightly and let rise for 30 to 45 minutes until puffy and nearly doubled.
  5. Bake to Perfection: Preheat oven to 350°F (175°C). Bake rolls for 20 to 25 minutes until golden brown and cooked through. Remove and let cool slightly before glazing.
