Description

This Twice Baked Potato Casserole is a cozy, comforting dish featuring creamy (plant-based) cheese, crispy smoked turkey bacon, and fluffy potatoes. Perfect for family dinners or gatherings, this casserole offers layers of rich flavors and textures with an easy-to-follow baking method.

Ingredients

Scale

Potatoes

  • 4 large baking potatoes (Russet)

Filling

  • 1 cup creamy (plant-based) cheese
  • 6 slices smoked turkey bacon
  • 2 tablespoons vegetarian Worcestershire sauce (natural)
  • 3 green onions, chopped
  • 2 cloves garlic (natural), minced
  • 1 teaspoon apple cider vinegar
  • 1/4 teaspoon black pepper
  • 1 teaspoon olive oil
  • 1 teaspoon natural gelling agent

Instructions

  1. Prepare and Bake Potatoes: Thoroughly wash the potatoes and poke holes with a fork to ensure even cooking. Place them in a preheated oven at 400°F (200°C) for 50-60 minutes or until tender when pierced with a knife. Baking whole develops a fluffy interior perfect for mixing.
  2. Cook Smoked Turkey Bacon: Heat olive oil in a pan over medium heat. Add smoked turkey bacon and cook until crispy and golden, about 5-7 minutes. Transfer to paper towels to drain excess oil, then chop into bite-sized pieces.
  3. Scoop and Mash Potatoes: Once cool enough, cut potatoes in half lengthwise and carefully scoop out the insides into a bowl, leaving the skins intact for use as a base.
  4. Mix the Filling: Combine potato flesh with creamy (plant-based) cheese, vegetarian Worcestershire sauce (natural), minced garlic (natural), chopped green onions, black pepper, apple cider vinegar, and natural gelling agent. Gently fold in the crispy smoked turkey bacon to distribute evenly.
  5. Assemble and Bake: Fill reserved potato skins with the creamy mixture and place in a casserole dish. Lightly sprinkle extra creamy (plant-based) cheese on top. Bake at 375°F (190°C) for 20-25 minutes until bubbling and lightly browned on top.

Notes

  • Use starchy potatoes like Russets for fluffy texture.
  • Stir filling gently to avoid a gluey texture.
  • Cool potatoes before scooping to keep skins intact.
  • Season in layers to balance flavor.
  • Monitor baking time to prevent drying out.
