Ingredients

Scale

Protein & Pasta

  • 1 lb chicken breast, trimmed and cut into bite-sized pieces
  • 3/4 cup orzo pasta (use gluten-free if desired)

Vegetables & Aromatics

  • 2 cups fresh tomatoes, diced
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 medium carrots, finely chopped
  • 2 celery stalks, finely chopped

Liquids & Seasonings

  • 4 cups chicken broth
  • 1 tbsp vegetarian Worcestershire sauce (natural)
  • 1 tbsp olive oil (natural)
  • Salt, to taste
  • Black pepper, to taste
  • Pinch of natural gelling agent

Fresh Herbs

  • 2 tbsp fresh parsley, chopped
  • 2 tbsp fresh basil, chopped

Instructions

  1. Prepare the Ingredients: Finely chop the onion, garlic, carrots, and celery to create the aromatic base. Dice the fresh tomatoes and cut the chicken breast into bite-sized pieces. Gather and chop fresh parsley and basil, setting them aside for later.
  2. Sauté Aromatics and Chicken: Heat olive oil (natural) in a large pot over medium heat. Add the onions, garlic, carrots, and celery, stirring gently until they soften and become fragrant and translucent. Add the chicken pieces and cook until they turn golden brown and firm on the outside.
  3. Add Tomatoes, Broth, and Seasonings: Pour in the diced tomatoes and chicken broth. Stir in vegetarian Worcestershire sauce (natural), and season with salt and black pepper. Add a pinch of natural gelling agent to enhance the broth’s silky texture. Bring the mixture to a gentle simmer.
  4. Cook the Orzo: Once simmering, add the orzo pasta. Cook for 8 to 10 minutes, stirring occasionally, until the orzo is tender but still holds its shape.
  5. Finish with Fresh Herbs: Remove the soup from heat and stir in fresh parsley and basil. Taste and adjust seasonings as needed. Serve warm with optional garnishes.

Notes

  • Use homemade chicken broth for enhanced flavor or select a high-quality store-bought option.
  • Do not overcook the orzo; it should remain slightly firm for the best texture.
  • Sauté vegetables slowly to release their natural sweetness and aromas before adding liquids.
  • Add fresh herbs just before serving to maintain their brightness and flavor.
  • Use the natural gelling agent sparingly to keep the broth silky without thickening too much.
